What is Marsala wine? Can you use a substitute for Marsala wine if a formula specifically calls for this single wine?

Marsala wine is produced on Sicily by using assorted varieties of grapes such as the Inaolia, Catarratto and Grillo grapes among others. How To Barbeque Fish

Once you know how to barbecue fish the correct way you'll love cooking and eating fish and seafood on the Bbq. Easy to cook when you know how, get out that Bbq and let's get cooking.

First off, the best type of fish to cook on a barbeque is firm textured fish and seafood such as salmon, cod, monkfish, shrimp or lobster. Hopefully as long as you've prepared the barbeque properly it won't fall apart -

Thai Cooking

Top Tips for Barbequeing Fish Make sure that the rungs on the grill are clean. There's nothing worse than old bits of food burnt on the grill bars, not only does it leave a horrible taste but it will make the fish stick.

Get that barbeque de facto hot. If using a charcoal grill, use plentifulness of charcoal to build a de facto good fire that will hold plentifulness of heat.

Let the flames die down until you can see that the charcoal has become white, it should take at least ½ hour - this is where many citizen make a vital mistake. You know what they say - Patience is a Virtue - or in this case Patience will help you cook food that you can eat, not the usual burnt offerings!

As long as the fish (or any seafood or meat) is well oiled it won't stick. Of course, it helps if you don't prod it and move it nearby every 30 seconds, if you do you'll end up with scrambled fish which isn't much use to anyone except the cat.

Wait until the flesh is seared before turning it over.

Only turn it over once. The best utensil for this is a wide, thin spatula, big adequate to lift the whole salmon or fillet in one go. An alternative is to buy a grill cage, the fish sits inside it and makes the whole turning over process child's play.

Don't salt anyone before grilling. This will dry the fish out.

If you're using a original Chargrill a good idea is to use herbs or flavoured wood chips thrown on the charcoal to tell added flavour.

Flavour Tip Barbeque rubs or marinades tell a yummy extra flavour when cooking your barbeque fish. I also like to paint some Thai sweet chili sauce over the fish before barbequeing, this is especially good with large prawn and shrimp and can be purchased at any good supermarket. These easy and easy ideas can help anyone learn how to cook fish on a barbeque.

Cooking - Pate A Choux (Choux Paste)

Choux is the French name for cabbage and these small dollops of puff paste do beyond doubt develop in the oven to look tiny cabbage heads. Choux pastry is versatile and can be formed into a huge collection of shapes and can be filled with an even greater collection of fillings and creams. Choux pastries can be used as delicious sweet deserts or tasty savory bites.

Choux paste is the basis for cream puffs and éclairs. An very beloved desert is cream puffs filled with ice cream and cloaked in chocolate sauce. These are known as profiteroles.

Cooking

Unsweetened choux paste is baked and filled with savory fillings or mixed with cheese and baked to make straightforward or fancy hors d'oevres such as gougeres.

Choux paste consists of flour, butter and water just like all other pastry dough but unlike others it is cooked on top of the stove before being shaped and baked. Milk is added for color and richness and it is leavened primarily with eggs. If choux paste is to be used with savory fillings it is often made with chicken stock or a blend of chicken stock and water as the liquid. Before the eggs are added the cooked flour paste must be allowed to cool slightly to forestall the eggs from cooking prematurely. But if the paste is too cold when the eggs are added, they will not blend in smoothly. The perfect completed paste should be shiny, smooth and very thick but not stiff.

The recipe you select to make choux paste is beyond doubt down to personal preference. Choux paste can be made by hand or with an galvanic mixer.

Small puffs, profiteroles and éclairs should be baked on ungreased baking sheets whereas larger puffs or large éclairs are easier to take off when baked on greased and floured sheets.

Once the choux paste has been piped onto the baking sheet they should be lightly glazed with an egg wash.

The first few minutes of baking should be in a hot oven, which will cause quick expansion then the oven temperature, should be reduced to desist the baking and to dry out the hollow shells.

If you wish to supplementary dry out the choux shells and allow more room for filling, turn off the oven and let the puffs dry out for a supplementary ten minutes.

To fill the puffs poke a hole into them using a small skewer or sharp knife. Then considered pipe in the desired filling. For example to fill with pastry cream, fill a pastry bag fitted with a ¼ inch tip, open puffs look intriguing when they are filled with cream piped straight through a huge star nozzle but please remember whipped cream does not maintain its texture when piped straight through a small tip.

Once baked and filled, choux pastries should be served immediately or placed in the refrigerator and served within the next few hours. Unfilled choux pastry can be freezing and placed in an airtight box but they are best used within the week.

Fast Food and original Food

The term "cooking" includes a wide range of methods, tools and composition of ingredients to originate the flavor and digestibility of food. Cooking technique, known as culinary art, generally requires the selection, estimation and combining of ingredients in a controlled policy in an exertion to perform the desired result. Constraints on success consist of the variability of ingredients, ambient conditions, tools, and the skill of the private cooking. The diversity of cooking worldwide is a reflection of many nutritional, artistic, agricultural, economic, cultural and religious considerations that impact upon it. Cooking requires applying heat to a food which regularly chemically transforms it and changing its flavor, texture, appearance, and nutritional properties. There is archaeological evidence that the primitive human being used to cook their food with fire that was the most foremost thing discovered by the primitive human being. Cooking food and cuisine culture vary from country to country and from one culture to someone else and each cuisine has its exact particularity. Nowadays, because of the modern life that changes all around us and influence our life style and eating habits, habitancy are less preparation their own food. Eating habits tend to unify habitancy from different society. The food production and the process of eating acquire new characteristics. Food available around us seems to be very different from the one that we used to eat.

Eating habits and modern life

Japanese Cooking

Everything is running in high speed, habitancy do not have time for cooking, don`t has the desire and patience to stay longer in the kitchen, and they don`t have the willing to get ready their own food. Old generation still prefer to cook their own food unlike young habitancy who prefer to eat fast food because they don't want to spend long time cooking and the desire for the cooking. The modern life shapes our eating habits and makes us like slave following its speed. It`s not hard to find fast food cafeteria they are in any place and every corner. Fast food consumption cause damages to the group and economic life of the country and leads to many condition problems such as obesity and heart diseases according to many studies. Also, many nutrition experts from different countries have already declared the epidemic character of fast food. The rapid process of globalization and modern life influence our eating's habits and gives opportunity to fast food restaurants to grow and flourish. Fast food seems to come to be very coarse everywhere, though some obvious aspect of the fast food in easy to prepare, available in many places, and it is a ample meal. But in other hand, we can estimation that its negative aspects are more foremost and bigger. I think it is easy to understand that fast food is one of phenomenon that is going to be approved by people. We are going to see the process of disappearance of the primary culture with the amelioration of fast food restaurants in all countries all over the world.

How to fight fast food addiction

The best example of the fast food success to change the modern life is the invasion of the world's food store by the giant fast food firm such as McDonald, Kfc and others. according to McDonald`s web site, McDonald has about 29.000 restaurants in 120 countries all over the world, and serves nearly 54 million customers each day. As well as it indicates the fact of such changing in eating preferences and even in the way of life itself. There is no doubt that right now fast food changes the face of many nations and eating habits around the world. To sum up, unfortunately, it is hard to forestall these global changes that primary food is going to be replaced by new foods that coarse for all habitancy in all countries all over the world. But the good news is that, recently there are some habitancy and some movements which try to divergence the process of modern life and ask habitancy to go back to their primary food. To solve this qoute we need restaurants that offers primary food, and able to attract large whole of truthful customers. Also parents must teach their children how to get ready and cook the primary food. Many habitancy form out that primary food is much best for our health, so they want to retain and keep the cooking tradition from evaporating. There is ample hope of habitancy to retain their food preparation customs and tradition. The major obstacles are the modern life style. Some habitancy might say that it is difficult to retain our primary food because it takes a long time to get ready and habitancy today can not spend a long time in cooking. Other people, especially older habitancy might say that, it is unfortunate to destroy culture and tradition. Those habitancy might be right.

Conclusion

In these days, habitancy have more condition problems that are connected with the new eating habits and fast food consumption. Despite some advantages of fast food the harm caused by fast food does not outweigh its benefit. I think that habitancy should consider the negative fact of fast food consumption and the benefits of preparation their own food at home. It`s unfair that the primary food which arrive to us from generation to generation we are going to replace it with junk food that will harm us more than advantage us. It`s unfortunate to lose the cooking tradition and eating homemade food ready by our mothers together around the table. I am sure that all of us must think over this qoute and try to find the approved clarification to save our cultures, our primary foods, and more importantly our health. So we should take performance immediately to retain primary food and encourage habitancy to get ready their own dishes, so they can stay wholesome and live longer. Even though fast food is cheap, convenient, yummy and available in every angle in our cities, but that does not mean that our condition is economy than the fast food that we eat.

Chinese Fried Rice - How to Make Fried Rice

Chinese fried rice is one of the most popular dishes ordered from Chinese takeout restaurants and a lot of people wonder how to get the great flavor and texture of this amazing dish. If you enjoy making fried recipes like a southern fried chicken recipe or chicken fried steak, you will enjoy making this tasty Chinese dish. Fried rice is so simple to make and it is the perfect accompaniment to any Chinese meat, fish, or chicken dish.

This recipe is a great way to combine leftovers. Using leftovers means there are infinite possibilities if you want to make something really flavorful and different countries have their own versions of this dish. Indonesian fried rice is different from the Thai style dish, for example.

Chinese Cooking

Cooking Tips for This Delicious Dish

Use steamed or boiled white rice to make this dish. The key to a good dish is to use chilled rice. If you use it freshly cooked, it will not taste authentic or have a good texture. Chilling it overnight gets rid of excess moisture and makes the grains firm and therefore easier to separate. Cooking with fresh grains means you will get mushy results. If you do not have a whole day, make sure it can cool for a few hours somewhere cool before you use it.

The wok has to be very hot so the soy sauce gives flavor to the dish, rather than making it soggy. Also, a layer of oil in a hot wok will dance around and create a nonstick coating. If the wok is not sufficiently hot, the contents will stick to it.

You can use any leftovers you want in this recipe. What about some leftover bacon or ham from breakfast, some chopped chicken from yesterday's dinner or some leftover carrots? Do not use anything too wet or in a sauce, else the dish will go mushy. Garlic, ginger, and salt are good seasonings and you can also add some chili powder to spice the dish up.

The Recipe - Step by Step

This basic fried rice recipe can be modified, as you like. If you are going to add more ingredients to it, you should use three eggs instead of two. This recipe serves four to six people as a side dish. Feel free to add chili powder, ginger, garlic or anything else you fancy.

What you will need:

  • 4 cups cold cooked rice
  • 1 finely chopped green onion
  • 4 tablespoons cooking oil
  • 2 tablespoons oyster sauce or soy sauce
  • Salt and pepper, to taste
  • 2 eggs

How to make it:

Beat the eggs with some salt and pepper. Heat half the oil in a wok, and then add the eggs. Cook them, stirring all the time, until they are scrambled but still wet. Take out the eggs and wipe out the pan with paper towels.

Add the rest of the oil and stir fry the rice for a few minutes. Use a wooden spoon or a pair of chopsticks to stir the grains and separate them. Stir in the oyster sauce or soy sauce, and then add the eggs back in the pan. Mix well and stir in the green onion. Adjust the seasonings and serve hot.

Fried chicken is another example of something you can make in your wok. A pan fried chicken recipe makes a change from deep fried chicken and the whole family will enjoy this mouthwatering treat.

Dinner party ideas always bring focus to table preparation. You can also dispose shiny pebbles on or colse to the vases. For table napkins, use raffia tied with ribbon matching the color of your table runner. For music, find Thai original instrumental music to improve the ambiance of the setting.

antique Chinese Food

Ancient Chinese food was based colse to rice as far back as 5000 Bce. Interestingly, the evidence from colse to the Yangtse River watershed points to not only boiled rice but to the fermented product that we know as rice wine. It was probably an accidental discovery, but one that has remained very favorite throughout Chinese history.

Wild pig species are native to southern China and appear to have been domesticated colse to 2000 Bce. It's not known at what stage hunting was supplanted by domestication and farming of pigs - bones don't tell that story - but this was probably after the introduction of chickens.

Thai Cooking

Chickens were probably adopted from the area that we now know as Thailand. These were roughly categorically domesticated before pigs. Even today, Dai citizen (Dai and Thai being pretty much interchangeable) live in Xishuangbanna, the area bordering the modern Se Asia countries of Laos and Myanmar (Burma).

In the north, where it was too cold for rice, the local farmers grew millet and some sorghum. These could also be boiled into porridge, or fermented to produce alcohol.

One aged Chinese food item not developed elsewhere is tofu. This fermented bean product was notion to have been made from about 1000 Bce. The soya bean is tasty and supposedly endowed with salutary characteristics. It is meant to be particularly good for diabetics. Soya milk is other product still consumed today.

Food preservation techniques allowed the aged Chinese to keep seasonal crops year round. Salting of meat and pickling of vegetables have long added to the collection of foods, especially over the winter period. Many citizen still eat rice porridge with pickled vegetables for breakfast. It's straightforward to put in order and categorically digested.

When seeing at aged Chinese food we shouldn't forget the favorite drinks. Boiled water has all the time been the favourite as it has long been a principle that food and drink should be consumed when at a climatic characteristic similar to the bodies so as not to disturb the natural balance. This preference may have lead to the discovery of tea leaves as flavouring.

Certainly the early Chinese seem to have experimented with lots of plants and drying methods to produce a wide range of tasty and salutary beverages. The favourites now are:

  • Green teas - especially those from Longjing near Hangzhou;
  • Fermented teas - Pu'er Tea and Oolong are maybe the most noted of these; and
  • Flower teas - such as Jasmine and Chrysanthemum.

Ancient Chinese Food may not have been the most varied. This was largely because of China's relative isolation. Only when hardy adventurers traveled along the Silk Road routes did wheat, cattle and sheep arrive in China. More collection was introduced when China wide southwards, and especially when sea trade brought lots of exotic foodstuffs to Guangzhou (Canton) and beyond. Those developments were for later.

Italian Dessert Cannoli Recipe

Cannolis are a great Italian dessert and they were said to have been developed by Sicilians in Palermo, Italy. These fried wafers are filled with a mixture of ricotta, candied fruit, chocolate, and other ingredients, and they are very, very tasty! Sicilians are supposed to have created this great dessert recipe, and I think that they are just delicious. I hope that this recipe is fairly easy to follow. You will need some type of dowel or metal tube that you will use to form out your cannoli shells. If you have a 3 ½ inch in diameter ring or even a 3 inch ring, you will need this to form the shape of your shells, also. You will also need a deep fryer, or a pan that is deep enough for these shells to float in oil.

Ingredients for Cannoli Shells:

Italian Cooking

3 Cups of unsifted flour

1/4 Teaspoon of cinnamon

1/2 Teaspoon of salt

3 Tablespoon of granulated sugar

2 eggs

2 Tablespoon of firm butter cut into small cubes

1/4 Cup of a good Marsala wine

1-2 egg whites, whisked slightly

First thing is to sift the flour with salt, cinnamon, and granulated sugar. You will make a well in the center of your sifted flour mixture. In the middle of the well you have made you will add the egg and butter and start mixing with a fork. You will work the egg mixture with the fork from the center out, to incorporate the moist egg with the flour mixture. You will then add your Marsala wine slowly until dough begins to come together like a playdough mixture. You will then start working the dough with your hands to form the dough into a dough ball. You will then cover and let the dough rise for about 10-15 minutes.

If you have a stainless area to work on great, if not you will need a wooden cutting board. You will need to slightly dust the area you plan to work on with a small amount of flour. You will then roll out the dough into 1/4 inch thickness. You will then use your 3 ½ rings and cut the cannoli shell circles. You will then use a rolling pin to roll the circles into oblongs or ovals. You will then take your dowels or tubes and wrap the dough around cannoli forms. You will then whisk your egg white, and seal your dough edges by using a brush or very clean hands if you have no brush. You will then roll up ever so slightly the ends so they will have a very faint lip or ring on the edge of the cooked product.

At some point when you are ready to get your shells into the oil to start cooking them you will heat your oil to around 350 degrees. Once it is at the proper temperature you will begin to fry two, or three at a time in deep hot fat for about 1 minute, or until lightly golden. Remove with tongs to paper towels to drain, you will then let cool for about 30 seconds to one minute and then slip out cannoli form, holding shell carefully so you will not break it. Cool shells before filling. Let them hang out while you will start to make your filling.

Ingredients for the Cannoli filling:

3 lb. ricotta cheese, that has had moisture removed

2 1/2 Cup of confectioners' sugar

1/4 Cup of semi-sweet chocolate pieces or grated sweet chocolate

1/4 Cup candied cherries, finely chopped

1/2 Teaspoon of cinnamon

1/2 Cup of chopped pistachio nuts

Confectioners' sugar to dust each of the finished Cannoli's maybe about 1/2 Cup

First thing you will want to do is take your ricotta and place into cheesecloth and wrap it into a ball and then you will tie a knot in the top part of the ball you have made. You will want to hold over night if possible to drain the water from the ricotta. If you have some way to hang the cheese ball in your refrigerator that would be best. You will need to have a bowl under the cheese to catch all of the moisture that will drain off of the ricotta. The shells that you have made will hole for a couple of days if you want to make these in stages. They are worth the wait, and the time taken to make these little delicacies.

First you will take the drained ricotta and get it into the bowl and work it for a minute or two to get it more pliable. You will gently start to combine the cheese, and the sugar into a mixing bowl, and fold in with a spatula until you obtain a light, airy blend of ingredients. You will start to fold in the minced candied fruit and the chocolate very gently. You will then start to spoon the cheese filling into a pastry bag, or a large Ziploc if you do not have a pastry bag. You will then twist the top into a knot to keep the filling from emerging, and fill each of the Cannoli shells, squirting the filling in from either end.

Once you have all of the shells filled you will dip the ends of the cannoli in the pistachios. You will then arrange all of the Cannolis on a platter, and sprinkle with a little powdered sugar, and they're ready. If you would like to garnish you can save some of the candied cherries and place them on the center of each Cannoli after the powdered sugar has been applied. Then serve, and enjoy.

Filipino Recipes - Camaron Rebosado (Shrimp) recipe - Pinoy Food

Camaron rebosado is a tasty way to cook shrimp. What gives a different twist to the formula is the soft luscious shrimp coated with egg and flour compound making it crispy when chewed. It is comparable to the tempura of the Japanese and the way Chinese cook shrimps coated with batter. It can be made even more tasty when taken with sweet chili sauce. Yummy!

My limited boy is very picky with food. But when you serve camaron rebosado on the table, there's no need to nudge him to eat his food because he will consume everything on his plate in no time. He loves this dish so much that we could never go for a whole week without it. Being so, I have mastered the formula and I want to share it with other Moms so their limited kids will get a occasion to enjoy this lip-smacking treat, too. Give it a try and you will categorically hear your kids request for this delectable shrimp formula every now and then.

Italian Food Has Multiple Influences

When it comes to Italian food, you need to understand that it was not just the Italians that shaped the way the food tastes or looks. There is a great deal of other influences that have molded the Italian food that we know today, and if you really look hard enough you can actually see some of the other countries handy work and foot prints on the cultures of Italy. The Greeks being close and convenient neighbors have had a hand in the Italian food scene, and while they have not always gotten along throughout history the Italians and Greeks have shared many recipes and made them better. The same can be aid for the Persians as well, as Arabs moved into the regions within Italy and left their mark as well.

Sea Food Is A New Development

Italian Cooking

While the Italians have an abundance of coastlines the Italian food scene early on did not actually include seafood as a prime choice. It took the Greeks to show the Italians that seafood is plentiful and that you can actually make magnificent dishes with the likes of crustaceans and finned fish. There is a major Italian fish industry today, and it is most evident by the amount of people that you find at the local fish markets on Saturday mornings. The Greeks introduced the Italians to fish recipes with white sauces and fine pastas, and the country of Italy embraced and practically adopted this fare as its own. Today, you will find many great Italian eateries that actually use seafood as their prime meal of choice and the sales on seafood plates go through the roof.

The Grain That Changed A Culture

If you were to look at what actually changed the culture of Italy the most in regards to Italian food, it would have to be the introduction of rice by the Arabs. When the Arabs made their way to Italy, they brought with them a grain now known as rice. This was brought to Italy through Spain, and Greece and actually did quite well in Italy when it settled. The land in Italy was well equipped to grow rice in crops, as it called for low flat land that was close to great water sources. Over the years the Italians used the rice to forge some of their most well recognized recipes available today. And when you dine on Italian in a restaurant, you will notice many dishes that will be either served with rice as the main course or with the rice on the side.

There Is No Denying The Grand Scope Of The Cuisine

When it comes right down to it, there is no denying the grand scope of fine Italian food. Italian restaurants can be found in just about every major city in the world today, and this speaks volumes to the quality and appreciation of the food that the Italians enjoy on a daily basis. You will be hard pressed to find a dish in the Italian menu that will not raise an eyebrow and make you curious to try.

Italian Food Customs and Traditions

Italian food customs are many and they vary throughout the peninsula but there is consensus over some rules of Italian food culture. These are some of the Italian food culture rules accepted all over our country.

Meal Times

Italian Cooking

Timing of meals is crucial. Lunch is served at 1.00 PM and dinner at 8.00 PM. In northern Italy it can be a little earlier and a little later towards the south but don't dream of eating at 4.00, the restaurant kitchens are closed until dinner time.

Italian Food Menu

A complete menu is composed of an "antipasto, primo, secondo, contorno, dolce, frutta e formaggi". Nobody is capable of such a feat on an ordinary day. Most meals are composed of two courses, a "primo" (pasta or rice) and/or a "secondo" (meat or fish) and a "contorno" (side dish).

Never in the Same Plate

Every dish is served in a different plate, mixing is strongly discouraged.

Salad

Salad is considered a side dish and, even if you order it as a starter, your request will be probably ignored.

Fruit and Cheese

Meals are generally closed with fresh fruits, often cheeses and coffee.

Cappuccino

Cappuccino is served only for breakfast, never at the end of a meal. If you can't resist the impulse of ruining a good meal with milk, ask for a "caffe' macchiato", coffee with just a drop of milk. It is considered an acceptable alternative to cappuccino.

Drinking Milk

Drinking milk at lunch or dinner is simply unheard of, it will kill the flavor of whatever you are eating and the relationship with the waiter.

Drinks

Acceptable drinks during a meal are wine, mineral water, beer and, only for kids, sodas.

No Cheese on Seafood

Never sprinkle or grate cheese on seafood or fish. The strong cheese flavor would murder the seafood aroma. Try it only at your own risk, most restaurants will decline any responsibility over the results.

Soffritto

Most of the best Italian dishes start with a "soffritto". It is generally made with onion, carrot and celery, finely cut and lightly fried in a little olive oil.

Holy Basil - A Tasty Herb That Also Boosts Your Health - 6 Benefits of Basil

Holy Basil is one of my most used spices in the kitchen. I use it for pretty much everything I make because it adds such a distinctive flavor to your cooking. My favorite thing about basil is that it's super easy to grow in any garden. A little bit of seeds will provide you with as much basil as you'll need for the entire growing season. It grows fast and when you pick off the leaves, they just grow right back.

And best of all, when Basil is planted next to tomatoes in your garden: they naturally keep away the bugs! Basil is a natural way to protect your tomatoes from pests. I learned that from an old farmer while shopping at the downtown farmers market. I'm always intrigued to learn everything those people know, and they love teaching people who ask!

How To Cook

If you grow enough basil in the garden, you can have enough to make your own pesto whenever you need it. Pesto can be expensive in grocery stores. But if you grow your own and learn a good recipe, you can have pesto anytime you want for cheap!

The benefits of basil go much further than adding flavor to your foods. It has amazing health benefits that you don't want to miss out on!

Here 6 benefits of basil for aiding your good health:

1- Helps with Nausea and Motion Sickness
2- Helps Your Body Digest Foods Easier
3- Loaded with Folic Acid, Potassium, Iron and Calcium
4- Basil Tea is very good for the respiratory system and throat infections.
5- Anti-Inflammatory, which is a great help for people who suffer from arthritis
6- Great for bronchitis, asthma, the flu, fevers, and the common cold

The Liver

A lot of my studies have been on the liver, and just how important they are to our bodies and good health. Our livers are responsible for so much that we absolutely must become more aware of how to keep it healthy. Our livers break down all our foods, cleanses the toxins in our bodies, processes all of our sensory input, and is our heat-furnace. It's the only organ in the body that can regenerate.

Our livers are extremely abused in our society, and Basil can play an important role in helping to heal our livers.

Where Does Italian Food History Begin?

Italy is one of the oldest countries in the world, and thanks to the geographical boundaries of the Mediterranean Sea and the Alps it has remained largely unchanged throughout history. Even during the Roman Empire, Italy was set apart. Legions that had been abroad always knew when they had returned to the mother country. Italian food history, however, reaches far beyond the country's borders.

For starters, look at pasta. There is much historical debate on its origins, but many historians point to Marco Polo's voyages to the Far East, from which he returned with all manner of foreign spices and foods, as the venue from which pasta came. The Chinese had cooked with noodles for centuries, and Marco Polo's men encountered the same on their travels.

Italian Cooking

The tomato, now considered a staple in Italian cuisine, was long thought to be poisonous, partly because it is related to the deadly nightshade plant. Other Europeans found it to be palatable long before the first Italian cook simmered some down to make tomato sauce.

The Greeks, neighbors and frequent military rivals of the Italians, had a great amount of influence on Italian cuisine, especially in the area of spices and the preparation of seafood. Calamari, or squid, now a common dish on every Italian restaurant menu, was originally something Greeks were known for consuming.

The Roman Empire's excursions into North Africa were another fertile breeding ground for culinary expansion. The number of herbs, spices and vegetables that entered the Italian menu from Egypt and the other African territories is uncountable.

Even today, Italian food history continues to evolve. Much of the changes now, though, take place beyond the shores of Italy. In America, for example, chefs like Mario Batali have fused classic Italian dishes with American cuisine to come up with dishes that combine the best of both worlds. In cities and towns all over the country, chefs are taking traditional ingredients and combining them in new ways. In what could perhaps be called a "full-circle" journey for pasta, some Italian-Asian fusion restaurants are even beginning to evolve.

But perhaps the best way to get a full idea of Italian food history is to get out and eat some. Better yet, eat a lot! Eating Italian food is always better than Italian food history.

Campfire Cooking Recipes - Kabobs

Campfire cooking recipes can be fun to try over an open fire surrounded by your friends and family as you enjoy the sounds and smells of the great outdoors all colse to you.

Ahead of time make this glaze for the chicken kabobs:

Cooking

1/4 Cup Orange juice concentrate, thawed
2 Tbs of Honey
1 Tbs of Soy Sauce
Dash of Ground Ginger

Kabob Ingredients:

1 Lb skinless, boneless chicken breast halves, cut into 1" pieces
1 Cup fresh pineapple chunks
1 medium green sweet pepper, cut into 1" pieces
1 medium red sweet red pepper, cut in to 1" pieces

Taking 6" long skewers alternate the chicken, pineapple, green peppers and red peppers leaving about 1/4" in the middle of each piece for basting. Place the kabobs on the rack of an uncovered grill directly over the medium fire and grill for about 12-14 minutes or until no longer pink. Place on hot coals, turning and brushing with glaze for up to the last 5 minutes of grilling time will help forestall the glaze from burning. If you are using wooden skewers instead of metal it is best if you soak them in water first before grilling with them or they may catch fire. You should soak them in water for about twenty minutes before using them.

Roasting Sweet Corn on the Campfire

You'll need about 6 Ears of Sweet Corn with husks, peel back the husks from the corn but do not remove. Clean all the silk off of the corn and rinse, sprinkle with salt and pepper. Wrap the corn in the corn husk and tie with wet kitchen string. Place on a grate over the fire but not where it will char and gently turn and roast the ears on all sides for about 25-30 minutes. You would want to start the sweet corn first before the kabobs.

Campfire cooking recipes should be tried with cast iron cooking as an asset in regards to roasting a few vegetables in a dutch oven like celery and carrots with a puny bit of spices and any left over chicken you could turn this dish into a tasty stew or hash by adding a few potatoes and some left over corn. Corn on the cob never tasted good than fire cooking over a campfire enjoying the great outdoors.

Kabobs can be made with some kinds of meats including lamb, beef, chicken, chunks of potatoes, pineapple, onions, peppers, shrimp and even fish. If you can thread it on to a skewer than you can make a kabob out of it. You can glaze the kabobs with soy sauce, olive oil, seasonings, honey or fruit juice to come up with a blend that you like. Kids enjoy a twist on a campfire cooking recipes by turning ordinary hot dogs into a kabob by threading chunks of hot dogs with chunks of pineapple and gently roasting them over a campfire.

How to Cook a Pork Loin

Here are some great tips and ideas for how to cook a pork loin.

Out of all the cuts of pork, the loin is probably one of the best and juiciest. Only the pork tenderloin is better. However, the tenderloin does have a greater cost. So, if you're splurging, get the tenderloin. If you're being thrifty, the pork loin is a close substitute and will taste tender and juicy as well.

How To Cook

When cooking pork, it's important that it is not overcooked. One of the most common myths is that pork needs to be cooked until it's completely white inside. Usually this means cooking to an internal temperature of 180° F. This is a total misconception that came out of a real concern over contaminated pork decades ago. Back then the USDA came out with recommendations that many followed. Later however, they were proved to be an over reaction.. In reality, bacteria in pork is killed at 137° F. so anything above that temperature should be safe. It's now recommended to cook pork until about 140°F to 145°F. At this temperature, it will be slightly pink inside. Cooking to the recommended 180°F. results in a dried out piece of meat and is not recommended.

Cooking a pork loin can be as complicated or as simple as you make it. There are 2 methods I would use:

1. Roasting In The Oven: Simple place pork in a roasting pan with a small amount of water. Season with salt and pepper, and roast at 350° for 20-30 minutes, until internal temperature reaches 145° F.

2. Grilling: Season the same as for the roasting method above, but instead of roasting in the oven, grill over a gas or coal grill for 20-30 minutes, until internal temperature reaches 145° F.

Some other ideas:

  • Top The Pork Loin with Bearnaise Sauce: This sauce is similar to Hollandaise sauce and made from egg yolks and butter. Although you could make it from scratch, an easier method is to buy it in a seasoning packet, such as the ones made by McCormick and whip it up quickly.

  • Garlic Seasoning: Cut several slits in top of roast and insert garlic cloves. Roast as usual and remove cloves before serving.

  • Stir Fry: Cut pork loin into bite sized chunks. Stir fry in a pan or wok on high heat for 5-10 minutes with fresh vegetables such as broccoli, carrots, celery, asparagus, pea pods or others. Season with salt, pepper, garlic, and teriyaki sauce.

  • Brine Before Cooking: Combine all ingredients below for a great vanilla brine taste and boil until ingredients are dissolved. Immerse pork roast in brine for about 12-24 hours, then roast or grill as usual.
    • 9 cups hot water
    • 2 1/2 tsp. vanilla extract
    • 1/2 cup sugar
    • 1/2 cup kosher salt
    • 2 Tbsp. cracked peppercorns

This brine is BY FAR my favorite recipe for how to cook a pork loin. Try it. I know you'll love it as I do.

What's in Filipino Food - Ube

Purple yams, officially referred to as ubes, are a common ingredient in Filipino kitchens. These yams are actually violet in color and are used in all different types of recipes. They have even been known to make a pleasant looking violet-colored cake.

Many yam aficionados will tell you that true Filipino ubes have a darker skin than the purple yams, referred to as such, which are available in the United States.

Chinese Cooking

Yams are not potatoes and should not be confused with purple Peruvian potatoes that are available, at some grocery stores and farm stands.

One of the most common Filipino ube recipes is Halayang Ube or purple yam jam. This is made from powdered ube, milk, condensed milk, egg yolks and butter.

Ube Balls are common, as well. This dish consists of condensed milk, mashed ube, cornstarch and water. The condensed milk and ube are heated over low heat, until somewhat warm.

At that point, cornstarch and violet food coloring is added. Continue cooking until mixture thickens. Stir constantly. Mixture is ready to cool, when it separates from the pan.

How to Cook a Really Crispy Duck or Chicken

If you're like me you love the skin on the outside of duck, if it's crispy. The texture of the meal can totally be changed with a crispy skin.

The secret is to make sure the duck is scored across the front and salted heavily.

How To Cook

This helps dry up the skin and makes for a super crispy skin. You will not be the only one that enjoys this Crispy Duck Recipe, but everyone else at your dinner table.

Take the duck that you're going to use for your main dish make slits in the breast with a knife and poke with a fork. Salt the breast heavily use your discretion and taste. You can use this method for any recipe you can think of.

Just use the cooking instructions from the recipe you are using. Place the bird breast down on the baking pan and cook like that for about ¾ of the total time that the recipe says to cook it for, making sure to drain the fat from the bird, usually by sticking it with a fork under the wings and legs.

During the last 1/4 of the cooking use the broil on the oven to finish cooking up the breast. This should make the skin crispy while the duck is still moist. Since this way of cooking can be used for almost any recipe for crispy duck recipe you have, it gives you more choices for the texture you want to use for your meal.

Cooking is all about mixing things up and building your own ways of cooking and recipes.

Also since you are slitting only the fatty layer of the bird you can use that to tuck away some hidden seasoning. Try tucking your favorite herbs into the slits under the skin, as the fat melts away it'll trickle down and out of the bird but first it'll seep into the meat.

This can add a new dimension to the meat, making it even more succulent. Taking these tips you should be able to use your imagination to come up with many more combos. With crispy duck recipes you can add extra flavors and also add a whole new texture to the dish.

Use these two together to try out new things, using the crispy skin to add texture to an otherwise smooth meal. So the next meals with duck you cook try out some of these combos, just using your taste and imagination. There are thousands of recipes in books and the internet to mix and match with.

Chinese Food - Peking Duck method

Peking Duck is one of the most famous Chinese foods originating from the old royal courts. For centuries, the best Chinese chefs trained extensively in order to make sure that they could present this delicacy properly to the Emperor. In fact, their very lives depended on it. Today, no chef will lose his life for messing up his Peking Duck formula but his self-esteem will be sorely dented. However, with attention to detail, a contemporary day Peking Duck can be a feast fit for royalty. Here's just one of the many up to date Peking Duck recipes:

Ingredients

Japanese Cooking

1 3.5 - 4 lb duck (fresh or frozen)
2 pints water
3 tbsp dark soy sauce
3 tbsp honey
5 fl oz rice wine (you can use dry sherry)
1 lemon

To serve:

8 - 12 Chinese Pancakes
4 - 6 tbsp hoisin sauce
16 - 24 spring onions (cut into thin slivers lengthwise or into brushes)

In China, ducks are specially raised on a diet of soybeans, maize, sorghum and barley for just six weeks, when they are ready for cooking.

Normally, the preparing of Peking Duck is rather time captivating and complex. The duck must be cleaned and plucked thoroughly, then air should be piped in to detach the skin from the flesh which let the skin roast to a lovely crispness. While the duck dries a sugar explication is brushed over the duck and it is then roasted in a wood fired oven. However, with our contemporary life styles being what they are, this Peking Duck formula is rather less complicated.

Rinse and dry the duck thoroughly, blotting with kitchen paper.

Mix the water, dark soy sauce, honey and rice wine together and couple with the lemon cut into thick slices and bring to the boil then simmer for about 20 minutes. Ladle the compound over the duck any times, ensuring that the skin is completely coated. Hang the duck up to dry somewhere cool and well ventilated with a roasting tin under it to catch any drips. When the duck is properly dry the skin will feel like paper.

Roast the duck on a rack over a roasting tin in which you have water to a depth of about two inches (this stops the

fat splashing), in a pre-heated oven 475ºF, 240ºC, Gas 9 for 15 minutes. Turn the oven climatic characteristic down to 350ºF, 180ºC, Gas 4 and continue cooking for 1 hour, 10 minutes.

Let the duck rest for about fifteen minutes before serving. You can carve the meat and skin into pieces using a knife or cleaver or you can shred it with a spoon and fork.

Serve the duck with warmed Chinese pancakes, spring onions and hoisin sauce.

Each diner takes a pancake, spreads on a minute hoisin sauce then tops that with some meat and crispy skin followed by a spring onion brush or some strips of spring onion. The pancake and contents are then rolled up into a tube and eaten whether with one's fingers or with chopsticks.

Even this simple version of the superior Peking Duck makes a very special evening meal party dish, fit for an Emperor.

Why Western Men Are Attracted to beautiful Asian Women

Why is that so many guys Love gorgeous Asian women? It seems like every year, more Western guys are dating and marrying women from countries like China, Japan and the Philippines. (And I can't blame them...personally, I think Asian girls are the sexiest women in the world!)

It's not only their exotic looks we are drawn to. There are a number of leading reasons why men find gorgeous Asian women so appealing. Some of these reasons, we're not even aware of on a conscious level!

Japanese Cooking

Here are some of the big ones:

#1 gorgeous Asian women have strong sexual appeal.

The silky hair; flawless skin; petite, hard bodies; and exotic Oriental features add up to compound that a lot of men find irresistible. Anatomically, the Asian face (particularly the women with more "Oriental" features) is constructed so that it seems to carry less expression and emotion than the faces of Caucasian people. The institute of their faces makes Asian women more "difficult to read" than Caucasian women, who tend to express and share their feelings constantly (whether we're in the mood to know about their feelings, or not!).

This gives Asian women an air of difficulty and unpredictability, which is deeply fascinating to men -- because we're hard-wired to thrive on challenges and the thrill of the hunt.

#2 They are approachable.

In my experience, there is no query that even gorgeous Asian women are more approachable than Western women. First of all, they smile more. It's part of their culture. Thailand is in fact called "The Land Of Smiles" because population smile all the time. (This can be confusing, since the "Thai smile" can mean a lot of different things -- and I account for it in my "Secrets Of Dating Asian Women" book. But hey, it beats being colse to a bunch of frowning, frumpy Western women!)

Try walking colse to a shopping mall in Bangkok, Jakarta or Manila...your mind will be blown by how many pretty young women are naturally willing to smile at you when you make eye contact. Divergence this with the hot women in America. They will frown most of the time in order to articulate that they are "too cool" to be bothered with meeting anything new.

Asian women are willing to talk to you. At that point, the key is knowing how to build their interest and attraction. This schedule will show you how to do that.

#3 They are exquisite homemakers and take pride in managing the household.

Visit a home run by an Asian Women, and you'll find that it is always organized and clean. The meals are ready with care, the husband always wears clean clothes, and the children are well-fed and neatly dressed. Unless your Asian sweetheart is from a rich family that employed servants, she was helping out with household duties starting at a young age. Even the poorest families keep their living space as clean as possible. In Asia, women will always make sure that your home is clean, and they will take pride in cooking your meals and holding you well-fed.

#4 They have a rich sense of culture and heritage.

Many Westerners are fascinated by the colorful, exotic, mysterious cultures of Asia, which are steeped in history. In recent times, Asia has gotten a credit as being rather "trendy" among Westerners. This is particularly true with Japan, which Westerners have begun to identify as a Mecca for fashion. (Japanese girls are years ahead of Western girls, with their super-cool, futuristic styles of dress.)

Why else would so many Caucasians, both men and women, put tattoos of Chinese and Japanese characters on their bodies-without ever even having visited those countries? Personally, I think it's pathetic. ("Check out the Japanese character I got tattooed on my shoulder-doesn't it make me look edgy and spiritual? I got it at a tattoo shop in New Jersey.")

By dating an Asian woman, you'll have the opening to learn more her fascinating culture-including its beliefs, traditions, music, cuisine, movies, arts, and history. This isn't the case when you date a woman who grew up in the town next to yours. Being able to constantly learn new things about her culture, while sharing yours with her, can be a big benefit in a relationship. There is less opening of the two of you growing bored with each other. When you date an Asian woman and have genuine appreciation for her culture and background, there are new things for you to recognize every day.

#5 Asian women place a high value on relationships and have unconditional love for their family.

Another fascinating aspect of Asian women is that unlike most of their counterparts in Western countries, they put colossal value on their families and relationships. Select the right partner, and she'll be extremely loyal to you and will avoid doing anything that will damage the relationship. This tends to bring out the best in you as a man.

Did you know that the Philippines is one of only two countries in the world where there is no divorce? It does not exist. Filipinas are raised to believe that when they marry, it is for life. Even in other, more developed Asian countries (where there is divorce), it is determined a shameful last resort-unlike in Western countries, where the attitude isn't until "'til death us part." It's more like, "Let's give it a try, and if it's not working out six months from now, I'll take your house and half your money, you jackass."

Again, I must remind you that I am speaking in normal terms here. Are all Asian women passionately loyal and committed to their relationships? Of procedure not. There are fullness of warped women and gold diggers out there; you've got to keep your wits about you and know to avoid them. This book will account for it all.

#6 We believe the attraction is mutual. A big hypothesize why a lot of guys "hone in" on Asian women is that they've been told that Asian women are as attracted to foreigners as we are to them. This idea of a "mutual fascination" is fascinating to guys who are fed up with Western women production them jump through hoops in order to sleep with them. And if you are reasonably fascinating and have white skin, it is true that many Asian women will desire to have a light-skinned child with you.

#7 They are spiritually grounded.

Many Asian women recognize a religion and take it seriously. Either she worships God, Buddha or whomever, religion tends to give Asian women a sense of calmness and inner peace that many Western women lack. Asian women don't need to do constant "soul searching" and fret about what is lacking in their lives. For the Asian woman, a loving partner, a happy, healthy household, and the love of her family and God is enough. (Isn't that how it should be?)

#8 They have a hardworking nature.

Asian women from poorer families typically start helping out their families from a very young age, waking up early to help out with house-hold chores. This is a dramatic Divergence from the way children are typically raised in Western countries. Also, they believe in working hard in order to furnish a great time to come for their families.

This is obvious in immigrant communities throughout the Western world; they'll work 24 hours a day if it means being able to send money home and enabling family members to migrate there and join them. These population respect the value of hard work-and a woman from this type of background is not going to turn into a spoiled "princess" once you marry her.

#9 Asian women can in fact love an older man.

In America, once a guy begins to feel "old" he believes that his dating options are itsybitsy to women his own age. I'm not just talking about guys who have reached retirement age. Even guys who are in their 30s start to think that women in their 20s are "out of their range!"

In Asia, it's perfectly normal for older guys to be with younger women (and not just the girls who can be "rented" for the night). A 40-year-old Westerner is often determined young by the local ladies. In fact, if you're under the age of 40, some Asian women will rule you out because they feel you're not yet mature and responsible enough for a serious relationship!

#10 Asian women make a man feel like a Man.

This is the biggest hypothesize why so many men feel compelled to be with gorgeous Asian women. The pure femininity of Asian women encourages the man to play the masculine role in the relationship, and she loves him for it.

In short, Western women make us feel small; Beautiful Asian woman make us feel big. Does this mean that we are insecure and need to have our egos stroked? No. It means that Asian women allow us to feel like the masculine beings we were born to be. They love us for our masculinity, instead of production us suppress it.

As I said before, our genetic programming plays a big role in our attraction to Asian women. As men, we are attracted to women who embody femininity. We want to be their protectors, and we naturally mesh with Asian women because they desire a man who is strong, get and able to furnish for them and protect them.

I like "being the man." Don't you? Asian women like it too, and that's one hypothesize why we're so compatible with them.
