An Easy Meatloaf Recipe For A Busy Cook

There are as many meatloaf recipes are there are cooks. This one is my favorite, an easy meatloaf recipe that can be varied to suit your tastes. Start with the basic recipe and add seasonings from the list below to suit your family. You can vary the meats used and the seasonings.

To keep my meatloaf recipe easy, I use ground beef. Many cooks use a combination of ground beef, ground pork or ground veal. Some use sausage in their mixture. If you desire a mixture of meats, use 1/2 to 3/4 pound of pork, veal or sausage to 1 pound of beef. Using the seasoned Italian style bread crumbs seasons the meatloaf, making this recipe easy and quick to prepare. I don't actually even measure anything. I just dump the ingredients together using a reasonable amount of each. If the mixture is too moist, add more bread crumbs. If too dry, add more ketchup. It really is an easy meatloaf recipe that is foolproof.

Italian Cooking

Basic Easy Meat Loaf Recipe

1 1/2 pounds ground chuck

3/4 cup Italian style bread crumbs

2 eggs

1 large onion, finely chopped

1 1/2 teaspoon salt

1/2 teaspoon pepper

1 teaspoon each garlic powder and onion powder, optional

1/4 cup catsup + more for top if desired

2 Tablespoons Worcestershire sauce, optional but good

1. Preheat oven to to 375 degrees F.

2. In a large loaf pan or ovenproof baking dish, mix all ingredients.

3. Shape into loaf shape.

4. Bake at 375 for 1 hour or until done.

5. I like to cover the top with more catsup during the last 20 minutes of baking.

You can try additional seasonings such as diced bell pepper, chopped celery leaves, minced parsley and thyme. If using sausage, try adding finely diced apple, and eliminate the garlic, onion powder and Worcestershire sauce. Small diced vegetables such as potato, carrots, or peas can be added if you like. Some cooks add chopped olives or chopped pickles or hard boiled eggs. You can substitute canned soup for the catsup, pouring more over the top as it bakes. The variations are endless.

If you are blessed with leftovers of this easy meatloaf recipe, this makes a delicious sandwich filling the next day, but don't count on it. My family eats this up.

I know this will give away my age group, but I can remember life without a microwave. My immature daughter thinks that means we started fire by rubbing sticks together!

The microwave oven has literally made life easier, especially for households like mine where both parents work surface the home. We want our meal times to be fast and easy, while remaining healthy and affordable. Our microwave oven is one of the appliances that help us spend less time in the kitchen.

We use ours all year long, but it literally helps in the heat of summer to not use the oven as often and heat up the kitchen at the same time.

It sounds simple, but needs repeating - read and consequent your microwave oven manufacturer's instructions. Here's some other safety tips:

· Remember, the food will be hot! Be rigorous when removing from the appliance
· Never use your microwave if the door does not close fully or there are any other defects
· If you cover the food being cooked, be sure to leave it vented so steam can come out naturally
· Don't use any metal utensils
· Use only "microwave safe" dishes
· consequent recommended cooking times. If the time is a range (5-7 minutes for example), start with the lower time

Now some general cooking tips:

· Cut food in uniform sizes for more even cooking

· Margarine can be softened by using half power for 45-60 seconds
· Wrap left over pizza slices in damp (slightly damp) paper towels and cook for 35-45 seconds. The damp paper towels help to keep the crust crispy. Otherwise, you may have a crust that you cannot bite!
· Baked potatoes are a microwave favorite. Just remember to pierce them with a knife to release steam.
· If you are defrosting meat in your microwave (which is a great idea!), be sure to cook the meat as soon as defrosted. The meat may be partially cooked and become a home for bacteria.
· Add salt after cooking. The microwaves are attracted to the salt and can cause your food to dry out.
· Use a dish larger than your food so it won't spill over while heating.

Gotta clean it!

· Place ¼-cup lemon juice and one cup water in a two-cup container. Heat until it boils (about 2 minutes on high). Leave the lemon water in the microwave someone else 5-7 minutes, then wipe clean with paper towels or a clean dishtowel.
· You can also use a blend of ½ water and ½ vinegar and do the same thing as above.

How to Cook Grouper

"Grouper" refers to a whole of different, but related, large fish preeminent for their stout bodies and big mouths.

Directions

Mix mustard, onion, salt and pepper. Coat the fillets with this blend and marinate for 1 to 2 hours in the refrigerator. Take off fillets from fridge and place on a hot grill. Cook the grouper until done, turning once while the grilling. (Note: 1-inch-thick fillets will take almost 13 minutes to cook. Thinner fillets will take less time.)

Baked Grouper

Ingredients

1 stick butter or margarine

Juice of 1freshly squeezed lemon

2 lbs. Grouper fillets (fresh or frozen)

1 cup bread crumbs

1/4 cup parmesan cheese

1 tablespoon fresh lemon juice

Directions

1. Melt the butter or margarine in a baking pan. Pour the lemon juice into the butter or margarine and mix well.

2. Lay the grouper fillets in the pan, coating one side with the butter-lemon juice mix; then turn and coat the other side.

3. Spread bread crumbs over the fish.

4. Bake at 360 degrees for 15 to 25 minutes; fish is done when it can be really flaked with a fork.

Whether grilled or baked, grouper goes well served on a bed of rice. Add lemon slices or sliced almonds for a extra touch.

Healthy Chinese Recipes - Cooking With Rice

Okay, let's start off with some simple healthy Chinese recipes, boiled rice and fried rice. One is the quintessential accompaniment to a Chinese dinner, while the other is your classic takeaway dish from the local Chinese restaurant.

But, with just a little tweaking we can make the former have a bit of life and color, and the latter an easy to knock up dish after a long day at work.

Chinese Cooking

Now, these are both suitable for beginners and vegetarians.

Boiled Rice... with a difference

Right, this is using a rice cooker. All cup measurements refer to the rice cooker cup, which is about 3/4 size of a US measuring cup.

  1. Measure the rice. 1 1/2 cups is enough for two people.
  2. Wash the rice until the water runs clear.
  3. Put the rice in the pot and add water. 2 cups of water per cup of rice is enough.
  4. Add some extras - sweet corn, peas, sun-dried tomatoes, diced carrots, pineapple chunks. These will add flavor, color and nutrition to the rice!
  5. Put the pot back in the cooker, close the lid and switch on the cooker.
  6. Don't open the lid until the cooker switches itself off. That's right, it will do the rest of the work for you.
  7. Dish up.
  8. Please remember, if the cooker doesn't keep the rice warm, to refrigerate all uneaten rice ASAP.

Do you like your rice hard or soft? I'm a hard man myself, but enough boasting, ha-ha! Basically, if you like your rice soft then add more water, and vice versa.

Fried Rice

Right, this is great for using leftover rice. You can add loads of stuff. This recipe will be a simple, egg fried rice. For you meaties you can add pre-cooked shrimps or meat strips to the wok in step 5.

  1. Prepare your ingredients - beat one egg per person, chop up some spring onions, dice up some veggies (or use canned or frozen ones).
  2. Add a little oil to the wok (or large frying pan). Heat up high and when the oil is hot, add the eggs. Cook until set and then remove from wok and put to the side.
  3. Add some more oil and let it get hot. Fry your onions until they just start to turn golden. Remove from wok and set aside.
  4. Add more oil if needed and keep the heat medium-high. Put in your veggies and cook until tender, but not too long. We don't want to lose all their goodness!
  5. Add a bit more oil. Throw in the rice, eggs and onions. Add a teaspoon of soy sauce (or more if you like it). Cook through, and make sure to keep an eye on the rice to stop it burning. You'll need to do lots of tossing and flipping with the rice to make sure everything is getting cooked through. It's sweaty work!
  6. Serve.

Please note, many Chinese people like to add a teaspoon of crushed red chillies at step 5. If you're feeling adventurous or you've got a cold, I suggest you do the same!

What, no meat?

Now the beauty of rice is that apart from being a gorgeously healthy Chinese food, simple to cook, and cleverly versatile, it is also a perfect vegetarian food. So, the recipes above are all Chinese vegetarian recipes, too, though they can be easily adapted to include meat if that's your cup of... um... gravy?

So, there you go two healthy Chinese recipes that you can go and make straightaway!

The Best Italian Cook Book?

Which is the best authentic Italian cook book? This is a question I am asked often. I have lived in Italy for ten years and many of my family and friends in the USA, Australia and the UK ask me for advice as to which Italian cookbooks give you a real "taste" of Italy.

English language "Italian cookbooks" are everywhere but in my opinion very few have much in common with genuine authentic Italian cuisine. My wife, who is Italian and an excellent chef, is in full agreement.

Italian Cooking

There are some notable exceptions however and I hope to be able to present these in a short series of articles. The books I have selected fall into four categories. The first category is devoted to those books that give an overview of Italian cooking and feature recipes from all the regions of Italy. The other three categories focus on some of the lesser known but exceptional gourmet regions of Italy.

Well let's get on with the first of my picks:

Cucina of Le Marche: A Chef's Treasury of Recipes from Italy's Last Culinary Frontier

Le Marche has very few good English language cookbooks focusing on the cuisine of the region. This is the best; the author is a native of Le Marche and an award winning chef. The recipes are 100% authentic. A refreshingly unpretentious book by a chef who will no doubt become a lot more famous in years to come.

Christmas Turkey Cooking recipe - Juicy Turkey Breast

16 cups water

2 cups sugar

2 cups tasteless salt

5 cloves garlic, crushed

For the turkey:

1 fresh breast, 9-11 pounds, deboned

6 tablespoons unsalted butter, melted

Black pepper

2 cups chicken broth

1. Merge the brine ingredients in a large pot. Bring to a boil, reduce heat and simmer, partially covered, until sugar and salt dissolve. Cool to room temperature.

2. Rinse the turkey breast, discarding excess fat. Place in a deep bowl or pot, turkey breast-side down. Pour the brine over the turkey breast and refrigerate. Loosely covered, overnight.

3. Preheat oven to 350*F. Remove the turkey breast from the brine 30 minutes before roasting. Line a shallow roasting pan with long pieces of heavy-duty aluminum foil.

4. Place turkey breast in the pan. Brush with 4 tablespoons of melted butter; season with pepper. Gather foil loosely on top and bake for 1 1/2 hours. Open the foil and bake for 2 1/4 hours more, basting every 30 minutes with broth and the remaining 2 tablespoons butter, until the turkey breast is golden brown and a meat thermometer inserted into the thickest part reads 165*F and the juices run clear.

5. Exchange the turkey breast to a cutting board; let rest for 15 minutes before carving. Reserve pan juices for gravy.

Bobotie, traditional South African Cooking!

Bobotie is one of the proudest and oldest South African recipes. It was influenced and inspired by the slaves that came to South Africa. They brought with them their great spices and flavours, and Bobotie was invented!

Ingredients:

Cooking

2 large onions

2 tablespoons butter

1 thick slice of white bread

1 cup milk

1 kg mutton (minced beef can be used as substitute)

2 ½ tablespoons strong curry powder

1 teaspoon turmeric

2 tablespoons apricot jam

2 almonds, quartered

¼ cup lemon juice (or vinegar)

2 teaspoons salt

½ teaspoon white pepper

¼ cup seedless raisins

1 green apple, grated

10 dried apricots, soaked and cut up (or apricot jam)

4 lemon leaves or dried bay leaves

2 eggs

Method:

1. Pre-heat the oven to 180°C. Lightly fry the onions in the butter.

2. Soak the bread in half the milk and mash with a fork.

3. Mix the meat with all of the ingredients except for the eggs, the rest of the milk and bay/lemon leaves.

4. Put the combination in an oven proof dish. Push the lemon/bay leaves in on the top.

5. Cover and bake for about 40 minutes.

6. Beat the eggs and milk together and pour over the meat. Slightly lift it to allow the egg to run into the bobotie. Bake until brown on top (about 15 - 20 minutes).

To serve:

Serve bobotie with yellow rice and raisins. Side dishes that go great with bobotie and yellow rice are vegetables like green beans and sweet potato, or try potato salad.

Drinking

If it happens to serve a drink to someone seat besides you, never turn the jar or the bottle against the natural way of your hand. For example, if you have the jar in your right hand, the glass must be on the left side, never behind, on the right side of your right hand. Otherwise it may not bring good luck.

Meals

In many countries it's common to eat a salad as entrance.

Not in Italy.

Italians eat salad as a side plate for the second dish. Now you can find some tourist restaurants in main cities that propose rich salads for the tourists...but Italians never ask for them!

Italians respects lunch time. If you come to visit Italy and want to have lunch, pay attention to restaurants' closing times. Usually after 2:30pm the kitchens are all closed and you'll have to eat a sandwich. If an Italian is traveling outside Italy, he will probably look for a restaurant during lunch time. If he doesn't or cannot find one, and finds one at 3:00pm, he'll probably say that is not hungry anymore, that he uses to eat at that time otherwise he loses his hunger.

Italians trust their food. While most of the tourists look for local food, considering it part of the vacation, it's very common to see Italians looking for Italian restaurants while abroad. They seem to be afraid of new and different food.

They begin to open themselves to new food when go outside Italy more often and learn to appreciate and trust foreign cuisines.

Other than trusting and loving their own food, Italians hate when people try to mix other food cultures with Italian ones. An example? Never add ketchup to a pasta dish! You cannot imagine how your Italian friend will stare at you if you try to do so.

The interesting in all these is that they don't do it for being presumptuous, but they really believe you're wasting your taste. Italian culture still has a lot of "musts" that go with generations that just follow it without knowing why it is done in this or that way.

Thai curry dishes are well known for their spicy qualities. Each curry dish is made with a specific type of curry paste; the term can also refer to the pastes themselves. There are two tasteless types of curries: coconut-based curry and water-based curry. The coconut-based curry will consistently have coconut milk in it whereas water-based curry has no coconut. Most water-based curry will involve fish as one of its ingredients. Here are some typical curry dishes Thais eat:

  • Kaeng Daeng: red curry with meat, red bell peppers, basil and coconut milk
  • Kaeng Hang Le: Northern style curry with meat, curry powder, lemongrass, ginger, shallots, shrimp paste, chilies and peanuts
  • Kaeng Kari: Indian style curry with meat, potatoes and coconut milk
  • Kaeng Kiaw Waan: a slightly sweet green curry with meat, Thai eggplants, pea eggplants, winter melon, Thai sweet basil (Bai Horapa), kaffir lime leaves and coconut milk
  • Kaeng Khua: three-flavored coconut-based curry (sweet, sour and salty) most tasteless meat is fish, shrimp or clam. Main added ingredients typically used in this curry can be pineapple, mushrooms or winter melon. Other ingredients are galanga, kaffir lime zest, dried chilies, lemon grass and shrimp paste
  • Kaeng Leung: hot yellow curry, most tasteless meat used is fish. Other ingredients are winter melon, chilies, garlic, turmeric, lemon grass, shallots and shrimp paste
  • Kaeng Liang: vegetarian curry, most tasteless vegetables are leech gourd (buab liam), gourd leave (bai tam leung) and phak nam tao (bottle gourd). Other ingredients are shrimp paste, dried shrimp and shallots
  • Kaeng Matsaman: curry with meat, potatoes, peanuts and coconut milk (a mild curry from the Muslim Southern part of Thailand)
  • Kaeng Pa: jungle curry is a water-based curry eaten in Northen Thailand. This curry is hot and full of flavor from fingerroot, kaffir lime zest, lemon grass, garlic, shallots, shrimp paste and chilies
  • Kaeng Phed: spicy curry with meat and chilies
  • Kaeng Som: hot and sour curry with fish (can be fired), morning glory vegetables and juice-based tamarind
  • Phanaeng: Thai southern style dry curry with meat, kaffir lime leaves and coconut milk

Soup
Spicy and non-spicy soup dishes are always served as one of a communal dinner's dishes. Most non-spicy soup dishes can be made with a variety of ingredients.

  • Kaeng Chued Ma Ra: stuffed bitter melon in soup broth. Stuffed bitter melon can use ground pork or chicken
  • Kaeng Chued Taeng Gwa: stuffed cucumber in soup broth. Stuffed cucumber can be ground pork or chicken
  • Kaeng Chued Tao Hu: beancurd, soy bean sprouts in soup broth. Some may add ground pork
  • Kaeng Chued Wun Sen: clear noodle, ground meat, vegetables and broth
  • Kaeng Tam Leung: chicken or pork rib broth with gourd leaves (bai tam leung)
  • Tom Kha Gai: hot and sour coconut milk soup with chicken, lemon grass, mushrooms, kaffir lime leaves and chilies
  • Tom Kha Pla Duk: hot and sour coconut milk soup with catfish, lemon grass, mushrooms, kaffir lime leaves and chilies
  • Tom Kha Ta Le: hot and sour coconut milk soup with discrete seafood, lemon grass, mushrooms, kaffir lime leaves and chilies
  • Tom Som: sweet and sour soup with fish, shrimp paste, tamarind juice, onion and coriander
  • Tom Yum Gai: hot and sour soup with chicken, mushrooms, cilantro, lemongrass, kaffir lime leaves, nam prik pao paste and chilies
  • Tom Yum Goong: hot and sour soup with shrimp, mushrooms, cilantro, lemongrass, kaffir lime leaves, nam prik pao paste and chilies
  • Tom Yum Moo Pa: hot and sour soup with wild boar, mushrooms, cilantro, lemongrass, nam prik pao paste and chilies
  • Tom Yum Pla Duk: hot and sour soup with catfish, mushrooms, cilantro, lemongrass, nam prik pao paste and chilies
  • Tom Yum Ta Ke: hot and sour soup with discrete seafood, mushrooms, cilantro, lemongrass, kaffir lime leaves, nam prik pao paste and chilies

Rice Dishes
With rice as Thais' staple, there are many of quick rice dishes. Some may eat as their main meal, but some may eat as snack.

  • Jok: rice porridge with ground pork, fresh ginger and green onion (some may add egg)
  • Khao Krug Ka Pi: shrimp paste rice with slices of thin omlet, fired shallots, shreaded raw mango, sweet shredded pork and dried shrimp
  • Khao Mok Gai: Thai-style chicken biriyani served with rice cooked with yellow spices
  • Khao Moo Daeng: Chinese-style red pork with rice, boiled eggs and cucumber
  • Khao Mun Gai: steamed chicken with rice cooked in chicken stock and garlic
  • Khao Nah Ped: roasted duck served on rice
  • Khao Ob Subparod: fried rice with shrimp, pineapple, onions and cashew nuts, baked in a pineapple
  • Khao Pad Moo-Goong: fried rice with pork, shrimp, eggs, onion and cilantro
  • Khao Pad Poo: fried rice with crab meat, eggs, tomatoes, onion and cilantro
  • Khao Pad Subparod: fried rice with shrimp, pineapple, onions and cashew nuts
  • Khao Tom: rice soup with a selection of meat and vegetable side dishes;
  • Khao Tom Goong: rice soup with shrimp
  • Khao Tom Moo: rice soup with pork
  • Khao Tom Pla: rice soup with fish

Desserts
Dessert is known as Khanom or Khong wan in Thai. Most Thai desserts are based on fruits and natural flavor.

  • Bua Loy Benjarong: taro, pumpkin, and mung dal bean balls in coconut milk
  • Kaeng Buat: potatoes, taro and pumpkin in coconut milk
  • Khanom Kluay: blended banana mixed with flours dessert with shredded coconut on top
  • Khao Niaw Dum Puek-Ma Prao: taro, coconut meat and black sticky rice with coconut topping
  • Khao Niaw Gaew: boiled pandanus sticky rice balls
  • Khao Niaw Ma Muang: mango served with sticky rice and coconut milk
  • Khao Tom Mud: steamed black beans, sticky rice and banana in banana leaf
  • Khanom Chan: nine-layered sweet. Main ingredients are flours and natural colors
  • Khanom Khrok: warm coconut pudding
  • Khanom Moh Kaeng: Thai-style egg custard
  • Khanom Tago: sago-based dessert with coconut cream on top
  • Khanom Thien: mung beans in banana leaf
  • Khanom Thua Fu: jasmine leech cakes
  • Khanom Thua Paep: mung bean stuffing coated with shredded coconut meat
  • Khanom Thuay: coconut cakes
  • Kluay Buat Chee: banana in coconut milk
  • Kluay Tod: deep-fried banana fritters
  • Luk Choob: made from mung dal beans, this dessert is a variety of slight replicas of fruits and vegetables
  • Mun Tom Khing: potatoes in ginger syrup
  • Nam Kang Sai: discrete fruits, beans or sticky rice with shaved ice on top
  • Paeng Jee: grilled coconut cakes
  • Sang Kha Ya Fak Thong: coconut custard in a hollowed pumpkin
  • Sakoo Khao Pod: tapioca and corn with coconut topping
  • Sakoo Tao Dum: tapioca and black beans in coconut milk
  • Tao Suan Med Bua: mung dal beans and lotus seeds with coconut topping
  • Thong Yip (Pinched Gold), Thong Yod (Drop of Gold) and Foi Thong (Golden Threads): these three are familiar egg-yolk desserts in Thailand. The color of these three desserts is a yellow-like golden color from the egg yolk

There are lots more dishes than I can mention here. Part Ii will talk more about seafood dishes, stir-fried dishes and fruits. Already a fairly ample list, the above selections help give one a sense of both the wide variety of dishes and the groups of dishes that describe to or build off of each other. assuredly many distinct combinations of dishes await! Three different Ways to Cook Eggs for breakfast

Eggs are all at once edible, traditional, improbable and versatile. Many of us have been eating eggs for morning meal since before we can remember. I used to think that the only way to cook eggs for morning meal was fried or scrambled. Undoubtedly, those are probably the two most former ways of cooking eggs. I want to show you three different ways to cook your eggs for breakfast, to add some excitement and collection to your morning meal.

1. Make an egg pancake. To do this, whisk together 2 or 3 eggs along with some finely chopped onion or garlic and spices of your choice. Pour this aggregate into a warmed, greased fry pan. The aggregate should be 1/4 inch thick. Cook until it's set on the lowest and you can lift it up without it falling apart. Flip over to cook the other side. Remove cooked egg pancake to a plate and top with one of the following: salsa and sour cream, whipped cream and fruit, pancake syrup or topping of your choice.

2. Try poached eggs for a change. Poached eggs are light and have a creamy texture. For those who are following a reduced fat diet, poached eggs don't wish adding any fat. To poach an egg, you need to bring about 1 inch of liquid practically to boiling, and then crack an egg into the liquid, slowly letting the egg slide out of the shell so you don't break the yolk and you don't get splashed. You can poach eggs in plain water, in slightly sweetened water, in milk, or even in a very watery food such as canned spinach. Simmer for a few minutes until egg white is set and yolk is cooked to your desired consistency. If using canned spinach, empty entire can together with juice into a pot and bring to a simmer. slowly crack desired amount of eggs on top, leaving space between each. Simmer to cook egg, using the pan lid if desired to speed up the cooking. The egg whites take on a small bit of the green color of the spinach they are cooked on, so if you want to cook up some ham to go with it, you could have your green eggs and ham.

3. Toad in a hole is the third way to go. I know, this might be old hat for some of you, but honestly, I have found that many population have not tried this before. If you have, then try one of my variations to make it different. To start out, warm up a fry pan and grease it. Take a cup and invert it on each slice of bread to cut a hole in the center. Take out the town piece of bread and store it to use for something else. Lay the bread in the pan and crack an egg right in the town where the hole is. The egg will expand to fill the hole and will bond to the edges of the cut bread. When the egg is done on one side, flip the egg and bread over to cook the other side. Serve on a plate with syrup on the side. Variations to make this different would be to whisk the raw eggs in a bowl and add chopped vegetables, then pour 1/3 cup of this aggregate into each bread hole. You could serve the cooked toad in a hole with peanut butter and jam, or with whipped cream and fresh fruit. The variations are only small by your imagination.

A great formula for shrimp sauce is this: you will need two cups of soy sauce, a cup of whipped cream, one-third cup of ground, roasted sesame seeds, a pinch of garlic powder and a teaspoon of dry mustard (dissolve it in a teaspoon of water). Place all ingredients except the cream in a blender for fifteen seconds. In a saucepan, put the blend and the whipped cream, stirring it over low heat.

Another example of great sauce is naturally a blend of the following: a cup of mayonnaise, a integrate of teaspoons of sugar, one and a half teaspoons of chilli sauce, a half teaspoon of paprika, half teaspoon of garlic powder, half teaspoon of lemon pepper, a quarter teaspoon of black ground pepper, one and a half tablespoons of catsup, and a pinch of salt. How Long to Cook Chicken Wings

People honestly love to eat chicken wings. There are so many ways to put in order chicken wings and they make breathtaking appetizers and party foods. One of the questions I am often asked is, "How long to cook chicken wings".

Chicken wings can be cooked using several different methods. I prefer deep frying wings but you can also pan fry your wings or bake them. Let's take a look at each formula and you can settle for yourself which formula is best for you.

How To Cook

Before you cook your chicken wings you will need to make sure they are fully thawed. This can be ended by letting them sit in the refrigerator for a day or two before cooking. When you are ready to cook your wings, rinse them in cold water and pat them dry with a paper towel.

If you will be deep frying your chicken wings be sure they are dry before placing them in the hot oil to avoid painful splatters. Heat your oil to 375 degrees. Once the oil is hot you can begin cooking your wings. Fill the fryer basket with a single layer of wings. You want the oil to just cover the wings when lowered into the oil. Lower the wings into the oil moderately and cook for 12 to 15 minutes. This will make a nicely browned chicken wing that is crispy on the covering and juicy and tender inside.

You may also opt to pan fry your wings if you do not have a deep fryer. This would be my second choice. Use a large frying pan for this method. Pour sufficient oil in the pan to cover the bottom. Heat the oil over medium-high heat. When the oil is hot place your wings in a single layer into the hot oil. Cook the wings for 6 to 7 minutes and then turn them over to cook for other 6 to 7 minutes. You could also use a wok to fry your wings. This will also make a nice crispy covering and tender inside.

My least favorite formula of cooking chicken wings is to bake them. Baking them is a much healthier alternative to all of the frying but the wings will not be nearly as crispy. However if you need to bake your wings heat the oven to 400 degrees. Place the wings in a glass baking dish that has been coated with a wee non-stick cooking spray. Bake the wings for about 30 to 40 minutes. You want to be sure the juices run clear from the wings.

Well there you go three methods to cook chicken wings. All the time remember to wash your hands and all utensils when working with raw chicken. Enjoy those tasty wee treats.

Mangia! Mangia! I just can't get enough of the great taste of Italian foods. Italian pasta, pizza, pork, beef and seafood recipes are much a part of my everyday life.

Growing up Italian in Chicago has been a wonderful culinary experience to say the least. The many different restaurants and families from different regions of Italy allowed me to taste some of the most delicious food in the world.

Italian Cooking

Food always conjures up great memories. When I cook something I haven't had in a while, it always seems to bring me back to the last time and place I did have it. I think it's the closest thing to a "time machine" we'll ever experience.

Years ago at every family gathering my Grandmother Theresa made a simple dish of pasta and cauliflower. Oh how we craved for this dish after she was gone. It was filling and delicious and you just could not get enough.

So finally one day I said I was going to try and make it. I just had to have it again. There was just no way was I going to live out the rest of my life without ever eating this dish again. Determined, I tried many times and one day I came as close as I possibly could to recreating her recipe. As we all know Grandmothers did not measure anything, so this was not an easy task.

Chinese Cooking Techniques

In centuries past when the Chinese still used forks and knives is when the foundation for modern day Chinese cooking was formed. This is back when the cutting techniques and delicate flavors came together to form salutary hearty meals.

This is also when the three original Chinese cooking techniques were formed.

The first Chinese cooking technique is stewing. Stewing can be either red or clear and is the simplest of the three methods. In clear stewing the clear liquid is brought to a boil and then allowed to simmer until the food is just tender. In red stewing a small amount of sugar and soy sauce is added which gives the stewed food a reddish tinge.

The second Chinese cooking technique is steaming. Steaming can be either wet or dry. The Chinese have used steaming as a original cooking formula for over 3000 years. Before ovens were coarse place steaming was a favorite formula which allowed for moist flavorful food that retained most of its nutrients.

Frying is the third of the original Chinese cooking techniques. Frying can be either deep frying in oil or sautéing. When deep frying the food is submersed in hot oil and allowed to cook until it floats. In sautéing the meat, vegetables and garnishes are cooked swiftly over high heat in a small amount of fat.

Through his study of the blood he found that healthy blood was a direct reflection of a healthy or alkaline diet. So he basically determined foods to be either alkalizing or acid causing. He found that when a person eats foods that are primarily alkalizing the body as a whole runs at an optimum level.

It is recommended that you start of your day with alkaline diet recipes that can be blended into a drink. The idea behind this is that the liquid form of these nutrients is more easily assimilated by the body. One of the alkaline diet recipes is as follows:

Super Alkalizing Green Smoothie

1 Cup of Good Water: alkaline water if available(fresh spring water is typically alkaline)

1 cup of organic blueberries

2 large unripe bananas

2handfuls of spinach,kale, chard, or some dark green leafy vegetable

seaweed-arame, kelp, dulse

1 shot of wheat grass juice

Combine the ingredients in a blender with some ice cubes. Mix thoroughly, and enjoy. A delicious start to your list of alkaline diet recipes, this smoothie will supercharge your day.

The next of the alkaline diet recipes is my personal favorite. It is very simple to make and quite tasty.

Spring Salad

Organic Spring Salad Mix

Add whatever greens you lie (kale, chard, spinach, collard)

cucumbers

onions

Summer black radishes

Toss the salad how you like and use this dressing.

Olive oil

fresh squeezed lemon juice

table spoon sea salt

dried crushed basil

dried crushed oregano

The amounts for the above recipe can be adjusted to your liking. The dressing tastes best when it is allowed to sit a day before you use it. Both of these alkaline diet recipes are extremely alkalizing. They contain very alkalizing ingredients.

Another thing that I like to to with my salads and other recipes, is to add freshly sprouted sprouts to them. Sprouting is an easy and extremely cheap way to add super alkalizing and biogenic foods to your alkaline diet recipes. Mung beans, broccoli, and lentils are all very good choices for sprouting. To sprout all you do is soak seeds in a jar overnight. Then you rinse the seeds and drain them 2-3 times a day for around 7 days. Keep the sprouts in a dark room or covered with NO light until the last day. Then set them in a spot where they can get moderate sunlight for about six hours. You will notice that they start to turn green from as they begin to produce chlorophyll. Finally, add the sprouts to your favorite alkaline diet recipes and enjoy!

How to Cook Arugula

Arugula is one of the many "new" greens development their way onto supermarket shelves in the United States, although in this case this mighty herb has long been known and loved in Europe, especially Italy.

Yes, one of the surprising facts about arugula is that is classed as an herb. It is not just a variety of lettuce, as many habitancy often reason upon first seeing it.

How To Cook

It also goes by many names in addition to "arugula." Some of these are "garden rocket," "rucola," "rocket salad," "roquette," and,. Simply, "rocket."

Arugula is a great source of vitamin C, also iron. It has been grown around the Mediterranean for centuries. The Romans determined it to be an aphrodisiac.

You can use arugula in salads as you would lettuce or spinach; just wash it thoroughly, spin it dry in a salad spinner (or drain it in a colander) and shred it into bite-sized pieces before adding.

The tastiest way to use arugula use it in a cooked recipe, such as a pasta or meat dish. Arugula has a natural peppery taste that goes well in Italian recipes particularly.

Here's an arugula formula my family absolutely loves. Actually, the star of the formula is the spaghetti-plus-ham, but in my opinion it's the arugula and olives that absolutely make it special.

Ingredients:

1 lb spaghetti

1/4 pound ham, thinly sliced

5 cups arugula

1 small chopped onion

1 cup parmesan cheese

juice of 1/2 lemon

1/4 cup olive oil

1/2 lb chopped pitted olives

4 tomatoes, quartered

Directions

1. Cook spaghetti in a large pot. Drain and set aside.

2. Cut the ham into small pieces. Place in a skillet. Add onion and olives. Cook over medium heat for 3 minutes.

3. Add ingredients from skillet (ham, onion, olives) to spaghetti.

4. Add arugula, cheese and lemon juice to spaghetti. Mix well.

5. Divide the spaghetti onto 4 serving plates. Place tomato quarters (4 each) on top of the plates of spaghetti. Drizzle olive oil over the tomatoes.

Serve and enjoy!
