Traditional Food in Colombia - Know Some Facts

Colombia has a privileged location in South America, with part of its coast to the cool Pacific Ocean and part in the Caribbean with its warmer waters. Part of the country has mountains, other part has valleys. Therefore they can grow all kinds of fruits, vegetables and have all kinds of seafood.

Through its history, Colombia has received influence of the Peruvian and Brazilian cuisine's tradition, but also from the Japanese and Arabic way of cooking. To this add their own cultural heritage, as the Amerindians also raised different species of animals, with which they could make delicious dishes. And to this variety we also must add the Spanish tradition.

Chinese Cooking

We could say that the Colombian cuisine uses different meats, fishes, plenty of vegetables and lots and lots of exotic and delicious fruits.   Also their delicacies depend on the regions, as food is different in the mountain regions than what is on the coastal regions. Its food is always, anyway, very tasty, with natural flavors, and not too spicy. Colombians also love soups, which are practically a must in each dinner or lunch. But the most important fact is that they love their food done with fresh ingredients, and fresh fruits.

In Colombia people have usually three meals a day. First one, breakfast, before to going to work. The most important meal is lunch. It is a meal consisting of three courses, soup, main dish and a drink, and dessert or fruit. Dinner is very light, taken around 9:30 PM.

What is more fascinating about Colombia is that all changes according to the region where one is. If in the jungle, or in the coast, or in the valley, people have their own way of dressing, have their different food preferences, their favorite drinks. And this is what makes it such a rich country and so very interesting.

But in all these regions there are some things in common too. They take it very seriously what their food is, the recipes they use and the different techniques are they same as centuries ago, giving them a sense of nationalism, reinforcing the feeling of being all from the same country. Their typical meals are full of tradition and history and they won't change that.

If we were to name some of the traditional dishes or food of Colombia, we could choose the arepa, the sancocho, the fritanga. Also lots of chicken, beef, fish corn, onions tomatoes, potatoes, rice and several different legumes.

To all this we should add a wonderful cup of coffee, the best in the world!

Chinese Cooking Wok - Master The Art Of Traditional Chinese Cooking

Chinese cooking has become one of the most popular ethnic foods of American culture today. While many people think that to get good Chinese food they must hit their local Chinese restaurant, this isn't at all the case; good Chinese cooking can be done right at home with your own wok!

Many kitchen supply stores have caught up with the demand for Chinese cooking utensils; many home cooks are trying their hand at this delicious ethnic cuisine right in their own homes. While fresh ingredients are essential to Chinese cooking, so is the use of a wok. Don't be fooled, however, there are many poor replicas on the market that won't give you the test you're looking for.

Chinese Cooking

The wok is characterized by it's round bottom shape, and is hammered by hand to ensure the perfect curve. The round bottom allows much less oil to be used, and therefore, food stays healthier without being saturated in cooking oil. It also is the best shape for turning the vegetables for that perfect stir-fry. The wok can also be used for purposes like braising, steaming stewing, and deep-frying, and the preparation of soups.

Many American versions of the wok have been modified to accommodate the American stove with a slightly flat bottom to set on the burner. A ring is also placed on the bottom to allow the wok stability while cooking. The American cook will also have their choice of handles; loop handles and stick handles will be the first decision to be made. The loop is the common choice of many chefs and is made of bare metal. Stick handles on the other hand are made of carbon steel and often coated with Teflon for safety purposes. The double-handed wok is also much more popular than a single handle. There are also a variety of different sizes available; 36 centimeters is a good size for family purposes; the larger sizes are used for restaurant kitchens.

For the home cook still nervous about trying their hand at Chinese cooking, there are a few more options. Many cooking classes have popped up throughout the country to teach Chinese cooking techniques. Whether for just one Saturday afternoon, or a weekly class, this is a great way to learn a few things about traditional Chinese culture, while learning to master the art of Chinese food. The most important thing is to not be afraid of the technique; while it's vastly different from what goes on in American kitchens, it is for that reason that Chinese cooking has become such a staple in American culture.

Traditional Italian Christmas Traditions and Recipes for Panettone

The Italians love food, and Christmas is no exception.

On Christmas Eve it is traditional to eat fish dishes; certainly, no meat is eaten on Christmas Eve. Panettone, a traditionally light Milanese cake, also plays a part in this meal but can be eaten at any time with family and friends during the holiday season.

Italian Cooking

Religion and faith plays an important part in the Christmas festivities, with families attending mass together and watching the Pope appear on his famous balcony on Christmas Day.

Christmas lunch is often stuffed pasta parcels, followed by stuffed goose or boiled capon or more seafood.

Made the traditional way, panettone is a comparatively complicated recipe, but this simple version suitable for a bread machine is a quick and easy way to create this delicious Christmas treat:-
Full of candied fruit, raisins, citron, anise or fennel seed, lemon zest and even almonds - here's three online bread recipes to choose from:-

Bobotie, traditional South African Cooking!

Bobotie is one of the proudest and oldest South African recipes. It was influenced and inspired by the slaves that came to South Africa. They brought with them their great spices and flavours, and Bobotie was invented!

Ingredients:

Cooking

2 large onions

2 tablespoons butter

1 thick slice of white bread

1 cup milk

1 kg mutton (minced beef can be used as substitute)

2 ½ tablespoons strong curry powder

1 teaspoon turmeric

2 tablespoons apricot jam

2 almonds, quartered

¼ cup lemon juice (or vinegar)

2 teaspoons salt

½ teaspoon white pepper

¼ cup seedless raisins

1 green apple, grated

10 dried apricots, soaked and cut up (or apricot jam)

4 lemon leaves or dried bay leaves

2 eggs

Method:

1. Pre-heat the oven to 180°C. Lightly fry the onions in the butter.

2. Soak the bread in half the milk and mash with a fork.

3. Mix the meat with all of the ingredients except for the eggs, the rest of the milk and bay/lemon leaves.

4. Put the combination in an oven proof dish. Push the lemon/bay leaves in on the top.

5. Cover and bake for about 40 minutes.

6. Beat the eggs and milk together and pour over the meat. Slightly lift it to allow the egg to run into the bobotie. Bake until brown on top (about 15 - 20 minutes).

To serve:

Serve bobotie with yellow rice and raisins. Side dishes that go great with bobotie and yellow rice are vegetables like green beans and sweet potato, or try potato salad.
