Chinese food. It's certainly tasty enough, but is it healthy? In these modern days of looking good and feeling good this is a question that might often be on the lips of anyone who has just devoured an egg fu yung. Well the answer to the question is that, yes, authentic Chinese cooking is very healthy. In fact the Chinese diet might be one of the healthiest in the world.

Sadly the same can not be said about the meals prepared at some Chinese restaurants or take-aways, where the food is often prepared with highly saturated fats and the meat used in the preparation of the recipes is not exactly of the leanest cut. The meals prepared in establishments like this are neither authentic, or healthy. Although they might very well be extremely tasty. But at what cost to the diners health?

Striped Bass Recipes

How delicious is striped bass? It's pretty freakin' delicious, especially when cooked properly. Here are some of my favorite recipes for cooking striped bass. Enjoy!

Roasted Striped Bass

Chinese Cooking

1/2 cup fresh bread crumbs

1/2 cup minced fresh parsley

2 tablespoons minced fresh chives

1 tbsp. minced fresh thyme

2 tbsp. minced fresh basil

salt and pepper

4 center-cut pieces of striped bass (each 1/2 pound and about 1 1/2 inches thick)

2 tbsp. Olive oil

Preheat oven to 350 degrees. In a small bowl, stir together the bread crumbs, herbs, and salt and pepper to taste. Place the fish pieces on waxed paper. With your hands, generously rub the oil on both sides of the fish. Sprinkle the bread crumb-herb mixture evenly on the fish, then pat it so that it adheres. Place the fish on a cake rack in a roasting pan. Roast until the fish just flakes, 10 to 15 minutes. To crisp the top, turn the oven to broil and place the fish under the broiler for about 2 minutes. Transfer to a serving platter and serve immediately. Note: This may be prepared 4 hours in advance through step 3 (except for preheating the oven) and refrigerated.

Spanish Style Striped Bass

2 lbs. Striped Bass fillets, trimmed and cut into serving size portions 2 tomatoes, medium size, thinly sliced 1/2 cup green pepper, chopped 1 cucumber, small, thinly sliced 1/2 cup onion, chopped 1 clove garlic minced 2 tbsp. Butter or margarine 2 tbsp. Parsley 1 tbsp. White wine 2 tbsp. Lemon juice 1/2 tsp. Marjoram

Prepare striped bass fillets by cutting fillets in half removing the dark flesh along the dark lateral line that runs through the center of the fillet. Also remove any dark flesh on the side of the fillet that had the skin and along the belly area. Cut trimmed fillets into serving size portions and place in a greased baking dish. Arrange tomato and cucumber slices on top of the fish. In a saucepan, cook onion, green pepper and minced garlic in butter until onion is tender but not brown. Remove from heat and stir in parsley, wine, lemon juice and marjoram. Spoon sauce over the fish. Bake in an oven preheated to 375¡F for 20 to 25 minutes or until fish begins to flake easily with a fork.

South Carolina Striped Bass

Ingredients:

2 Striped Bass Fillets

1 cup white corn meal

1 cup all purpose flour

2 cups buttermilk

Lemon Pepper seasoning, to taste

Directions:

1. Preheat oil in fryer or Dutch oven over medium-high heat.

2. Cut bass into nuggets, place in a bowl with buttermilk and allow to soak

(refrigerated) for at least four hours.

3. Drain buttermilk, but do not rinse fish.

4. Combine corn meal and flour in a zipper top plastic bag.

5. Add fish pieces to the flour mixture a few at a time, shaking bag regularly to coat. 6. Remove fish nuggets and carefully place into hot oil. 7. Fry for 3-5 minutes or until golden brown. 8. Remove from oil, drain, and sprinkle with lemon pepper seasoning.

Who Invented Ice Cream?

Unlike pottery, arrow heads and metal tools, traces of ancient ice creams are not really something that archaeologists can unravel. The ice cream history is therefore elusive and not very well known. People living in climates where ice and snow formed naturally are believed to have enjoyed a form of sorbet since prehistoric time by flavouring snow with fruit, berries and honey. This was probably especially popular in warm regions with high mountains, since snow could be gathered from the high altitudes and brought down to regions where it provided much sought after relief from the heat.

Even though ice cream itself leaves no visible mark in ancient history, items and buildings used for its creation can. Most historians agree that the upper class enjoyed ice-creamed flavoured with fruit juices during the Song Dynasty (960-1279 B.C.) According to "History of food" by Toussaint-Samat the Chinese may even have created a special ice-cream creation method earlier than the Song Dynasty. This method involved pouring snow and saltpetre over containers filled with syrup. Salt will lower the freezing point of water to subzero. Diary products are still rare in Chinese food, but according to legend Mongols introduced the custom of drinking milk to the Chinese during the Yuan Dynasty and this eventually led to the invention of milky ice-cream.

Nutrient Dense Food List overview

Many people, myself included, have searched for a "nutrient dense food list". My theorize for finding and possibly yours is that last year the American Heart connection recommended that our diets should consist primarily of these "nutrient dense foods". Now they use the term "nutrient rich". They probably understanding they were confusing people.

A nutrient dense food list would contain practically any food that is not processed, does not contain added sugars or fats and is relatively low calorie when compared to the nutrients (vitamins, minerals, amino acids, etc.) that it contains. All fresh fruits and vegetables would be included on this list.

Many foods that are dried, such as beans, oats, rice and pasta would also be included in a nutrient dense food list. Some have more calories than others, some are enriched with more vitamins and minerals than others. The real qoute is the sauces, sugars and other ingredients that we add to these foods that growth the caloric content, without addition the nutritive value.

In order for a dairy goods to be included in a nutrient dense food list, it must be fat free or very low fat. No more than 30% of the calories should come from fats. For example; fat-free cottage cheese would make the list, but cheddar cheese would not.

One small serving of cheddar cheese (about the size of a cheese cube) contains 69 calories and 51 of those calories comes from fat. Reduced fat cheese products are not much better, the calories are reduced, but the division of fat is still nearly 50%.

Fat free mozzarella is a good choice, but what you normally see in the grocery store is "part-skim", which has 72 calories per serving, 41 calories from fat and provides only 22% of the body's daily need for calcium. On the other hand, two servings of low fat swiss contains 54 calories, only 14 from fat, and 28% of the calcium needed, plus 8.6 grams of protein.

Omega 3 fats, found primarily in fatty fish like salmon and to a lesser extent in tuna and other fish, are considerable for the proper function of the brain and heart.

There are a number of different kinds of fats; trans fat, saturated fat, polyunsaturated fat, monounsaturated fat, etc. Trying to frame out this whole labeling thing can be very confusing. The source of the fat is important, animal fat is bad, vegetable fat is not so bad, but 30% from any source is enough.

If you eat colse to 2000 calories a day, 30% is 600 calories. There are about 100 fat calories in every tablespoon of mayonnaise, cooking oil, margarine, etc. And, you still need to add in the fat calories from fish, chicken, cheese and other sources.

If you need to lose some weight and you are shooting for 1500 calories per day, then 450 total calories from fat is enough. Opinions vary on whether or not less fat is better, but, not to be repetitive, experts agree that 30% is enough.

A unblemished nutrient dense food list would be book length, at least. A good place to start is to look at the foods that you eat everyday and start replacing the high calorie, high fat, highly processed foods with fresh fruits and vegetables. Chinese Cooking - Sauces & Spices

Sauces and spices are the key in any cooking. No dishes would taste good without them. The only exception is that some sea animals can be naturally steamed or boiled before serve. Well, that is because they are salty already in their body. Imagine eating steamed river shrimp? I wouldn't bother!

I'd like to introduce some of the most favorite sauces and spices that we use everyday. You may already know some of them, but I bet you haven't heard of others.

Thai Cooking

Sauces

Bean Curd Sauce (Dou Fu Ru):

Fermented bean curd, rich in proteins. May be kept for fairly long time. Comes in two types - red and white. Red is typically used to cook Braised Pork. White tastes spicy and is commonly used as a side dish along with noodles, buns, or congee. Some like to serve with soy sauce and vinegar for meat dumplings, hot pot dishes, and others. Favored by north and west of China.

Oyster Sauce:

Oil from oyster. Heavily salted. Use sparingly for sautéed dishes. favorite in Hong Kong, Cantoon (Guang Dong, to be exact), and some areas in south of China while not used at all in north and west of China except for hotels and some restaurants.

Shrimp Sauce:

Oil from salted baby shrimp dried and fermented. Use sparingly for sautéed dishes. Used heavily for dishes from south of China.

Sesame Sauce (Zhi Ma Jiang):

Ground sesame seed with strong flavor. Used for cold dishes.

Hot Pepper & Bean Sauce:

Hot sauce made from combination of hot spices and beans. Red or brown in color. Use sparingly in sauteed dishes or cold dishes. In north, people often mix this sauce to stir fried minced meat and serve with noodles (make it Noodles with Meat Sauce).

Hot Pepper Oil:

Made from sesame oil and red pepper. Serve with meat dumplings, buns, etc.

Sesame Oil:

Flavor is too strong for use in frying and sautéing. Use only for enhancing flavor of cooked and cold dishes, noodles, hot pot sauce, soups, etc.

JiangXi Vinegar:

A special vinegar produced in JiangXi province. Light amber in color with a distinctive fragrance. Use for meat dumplings and cold dishes.

Spices

Star Fennel:

Shaped like eight cornered star, brown in color. Use for cooking with chicken, meat, offal and fish.

Anise Pepper:

Dried brown round spice. Added sparingly in chicken and meat can remove the unpleasant smell (fishy smell). Can also be used for production pickles or even some deserts.

Five Flavored Powder:

A combination of anise pepper, star fennel, clove, cinnamon, and dried tangerine peel. Sparingly used in cooking fish and meat.

Pepper Salt:

Mixture of anise pepper powder with salt. Serve with fried chicken, meat, and fish.

The American cook will also have their choice of handles; loop handles and stick handles will be the first decision to be made. The loop is the common choice of many chefs and is made of bare metal. Stick handles on the other hand are made of carbon steel and often coated with Teflon for safety purposes. The double-handed wok is also much more popular than a single handle. There are also a variety of different sizes available; 36 centimeters is a good size for family purposes; the larger sizes are used for restaurant kitchens.

For the home cook still nervous about trying their hand at Chinese cooking, there are a few more options. Many cooking classes have popped up throughout the country to teach Chinese cooking techniques. Whether for just one Saturday afternoon, or a weekly class, this is a great way to learn a few things about traditional Chinese culture, while learning to master the art of Chinese food. History Of Citrus

The pleasing appearance of citrus trees and the fruit was mentioned by many ancient travelers, even though the fruit of citrus trees had not evolved to the point as an prominent food staple, the fragrance of all parts of the citrus trees, along with the flowers and fruit, were desirable perfumers of rooms and were belief to repel insects.

The occurrence of citrus in Europe and Mideast were belief to have been natural occurring native trees and shrubs, but historians today believe that the ancestor of the citrus trees, Citrus medica L., was introduced by Alexander the Great from India into Greece, Turkey, and North Africa in the late 4th century Bc. The most ancient citrus was called 'citron.'

Japanese Cooking

There are ancient clues from wall paintings in the Egyptian temple at Karnak that citrus trees had been growing there. There were other suggestions that citrus trees may have been well-known to the Jews during their exile and slavery by the Babylonians in the 6th century Bc. Even though speculations propose that citrus trees were known and grown by the Hebrews, there is no direct mention in the Bible of citrus.

The first recording of citrus, Citrus medica L., in European history was done by Theophrastus, in 350 Bc, following the introduction of the fruit by Alexander the Great.

In early European history, writers wrote about Persian citrus, that it had a fabulous fragrance and was belief to be a remedy for poisoning, a breath sweetener, and a repellant to moths.

Citrus was well known by the ancient cultures of the Greeks and later the Romans. A gorgeous ceramic tile was found in the ruins of Pompeii after the city was destroyed by a volcanic eruption of Mount Vesuvius in Ad 79. an additional one mosaic tile in the ruins of a Roman villa in Carthage, North Africa, in about the 2nd century Ad, clearly showed the fruit of a citron and a lemon fruit growing on a tree branch.

Early Christian tile mosaics dating back to 300 Ad of both oranges and lemon were shown in lemon-yellow and orange colors surrounded by absorbing green leaves and freshly cut tree branches; the relics can still be seen in Istanbul, Turkey at mosques that once were churches of Emperor Constantine.

It is not known how, where, or when the exceptional present day varieties of citrus trees developed, such as the sweet orange, lemon, kumquat, lime, grapefruit, or pummelo, but there appears to be a normal consensus of opinions that all these citrus developments and improvements were obtained by natural and artificial selection and natural evolution. It is well known, that the Romans were well-known with the sour orange, Citrus aurantium L. And the lemon tree, Citrus limon. After the fall of Rome to the barbarian invasions and the Muslims, the Arab states rapidly spread the simply improving cultivars of citrus fruits and trees throughout much of North Africa, Spain, and Syria. The spread of sour orange, Citrus aurantium L., and the lemon, Citrus limon, extended the growing and planting of these trees on a worldwide scale by planting the seed, which produced citrus trees very similar to the parent trees. The Crusades conquest of the Arabs later spread citrus planting and growing throughout Europe.

The sweet orange, Citrus sinensis, appeared late in the 1400's, near the time of Christopher Columbus, who discovered America. After trade routes were fulfilled, when the Turks defeated the Eastern Roman Empire in 1453, centered in Constantinople (Istanbul), many European kings began to seek alternate, trade, sea routes to open trade by ships with China and India. The sweet orange tree introduction into Europe changed the dynamics of citrus fruit significance in the world. The trip of Portuguese explorer, Vasco de Gamma, recorded that in 1498, there were multitudes of orange trees in India, and all the fruits had a sweet taste. The new sweet orange variety, known as the "Portugal orange" caused a dramatic surge in citrus planting, much like the much later appearance of the "Washington navel orange" tree introduction into California.

The lime, Citrus latifolia, was first mentioned in European history by Sir Thomas Herbert in his book, Travels, who recorded that he found growing "oranges, lemons, and limes" off the island of Mozambique in the mid 1600's. Lime trees today are available in many cultivars.

In 1707, Spanish missions were growing oranges, fig trees, quinces, pomegranates, peaches, apricots, apples, pear trees, mulberries, pecans, and other trees agreeing to horticultural documents.

The Mandarin orange, Citrus reticulata, was described in Chinese history in the late 1100's, but was unknown in Europe, until it was brought from a Mandarin province in China to England in 1805, where it spread rapidly throughout Europe.

The pummelo, Citrus grandis, also called the shaddock and the 'Adam's Apple' was growing in Palestine in the early 1200's and was planted and grown by the Arabs. The pummelo is believed to have an Asian origin and was planted as seed in the New World.

The grapefruit, Citrus paradisi, is believed to have arisen as a mutation from the pummelo tree. Grapefruit were so named because they grew in clusters like grapes, but most gardeners thought about them to be inedible until A.L. Duncan found an superior seedling grapefruit that was named Duncan grapefruit in 1892; the original tree is still alive and growing in Florida.

Christopher Columbus introduced citrus on the island of Haiti in 1493. It is believed that he brought citrus seed to be planted and grown of the sour orange, the sweet orange, citron, lemon, lime, and pummelo fruits. Records show that these citrus trees were well established in the American colonies in about 1565 at Saint Augustine, Florida, and in coastal South Carolina.

William Bartram reported in his famed botanical book, Travels, in 1773 that Henry Laurens from Charleston, South Carolina, who served as a President of the Continental Congrees, introduced "olives, limes, ginger, everbearing strawberry, red raspberry, and blue grapes" into the United States colonies after the year 1755.

William Bartram in his book, Travels, reported that near Savannah, Georgia, "it is absorbing to note that as late as 1790, oranges were cultivated in some quantity along the coast, and in that year some 3000 gallons of orange juice were exported."

Many of these wild orange groves were seen by the early American explorer, William Bartram, agreeing to his book, Travels, in 1773, while traveling down the Saint John's River in Florida. Bartram mistakenly belief these orange trees were native to Florida; however, they were established centuries earlier by the Spanish explorers.

The citrus commerce began rapidly developing in 1821 when the Spanish gave up their territories and its many orange groves to the United States. Wild orange tree groves were top-worked with improved cultivars and residents traveling to Florida realized how refreshing orange juice tasted; thus began the shipments of oranges, grapefruit, limes, and lemons that were sent to Philadelphia and New York by railway and ships in the 1880's.

Citrus plantings were extensively done in California by the Spanish missionaries; however, the market commerce began to grow with the 1849 Gold Rush boom, and efforts to contribute the miners from San Francisco with citrus fruit were successful. The completion of the Transcontinental Railway added stimulated the citrus industry, since citrus could be rapidly sent to eastern markets. Later improvements of refrigeration helped to increase citrus growing and planting, mainly oranges, lemons, and limes throughout the world in 1889.

Florida at first dominated citrus production in the United States, but because of some devastating freezes in 1894 and 1899, Satsuma orange trees were virtually wiped out in the Gulf States. Thousands of acres of Satsuma orange trees were wiped out in Alabama, Texas, and Louisiana in the hard freeze of 1916; thus the citrus production of the United States began to shift from Florida to California.

Citrus is marketed throughout the world as a beneficial health fruit that contains Vitamin C and numerous other vitamins and minerals in orange and citrus products lime marmalade, fresh fruit, and frosty and hot-pack citrus juice concentrates.

How to Get Rid of Leather Smell

The leather odors may be relatively easy to deal with on a small scale, but on a large scale they can seem altogether impossible. Good quality leather will smell quite strong for several years, really. So the real question that should be asked is: Are you sure you want to remove the leather smell from your leather products? Some people actually find the smell of leather rather sexy, and it's a good indicator that your leather is of high caliber. Who doesn't want to have that leathery smell on their leather items?

But to each his/her own, and if you'd rather that your leather product (whether it's a jacket, car upholstery, the sofa or even your handbag) smells something else entirely, then follow the tips and advice below. For what it's worth, you have something made of animal hide. You should probably expect it to smell like animal hide.

How To Cook

Leather Smell Removal

* The only true cure (sorry for that pun) for leather musk is age; wait for the smell to go away as the leather ages, that is. You could probably mask it with something else, but putting something on the leather will probably make it take longer for the smell to go away.

* Masking agents are often used to try and take care of problematic odors. The problem with a masking agent is it does just that, it "masks" or hides the leather odor; it will not remove it.

Masking agents are often oil based and can leave a residue on the materials being treated. Masking agents can also trigger allergic reactions in sensitive individuals, such as runny noses and itchy watery eyes. A masking agent will also dissipate with time and it is possible that the original leather odor will return so use with caution.

Potpourri, air fresheners, The Body Shop Scents, a particularly fragrant shampoo, perfumes, lemon juice and whatnot are just some of the many examples you can use to mask that animal hide stench.

* You might want to go into a tack shop (horse supplies), if there's one nearby, and ask them for help. There are all sorts of leather conditioners and cleaners, and some of them can help cover the odor. Murphy's oil soap, which is always what cowboys used for cleaning saddles and boots, might also work (as well as making the leather shiny), but then again, many of those same cowboys are usually trying to keep the leather smell!

* On a small scale, leather odors can be removed by simply placing the offending article of clothing or leather product into an airtight container with baking soda for a few days. This restoration treatment however, may or may not work with this particular odor and it is certainly not possible to carry out on a large scale.

* Here's another baking soda trick; put your leather item in a bag/pillowcase. Sprinkle a liberal amount of bicarbonate soda in it. Fasten the bag up, give it a good shake, and then leave it in there for at least twenty-four hours. The baking soda should help absorb some of the odors.

* You can also put your leather item in a plastic bag with crumpled-up newspaper for a few days; it should absorb the odor. This is also part of the reason why some shoe stores put newspaper inside their leather shoe products (aside from avoiding the shoe to warp because of the hollow insides).

* Activated charcoal may work just as well as the newspaper method, but you don't want it to touch your leather item because it will ruin and stain its surface.

* You can also sponge the jacket down with ¼ cup of white vinegar to a bucket or sink of water. Sponge down your beloved leather jacket with the solution. Rinse afterwards, then apply the vinegar solution again, then rinse once more and hang to dry some place out of direct sunlight as heat can damage leather.

Vinegar will condition and clean leather and remove odors, or at least it will once its own sourness dissipates from your leather item. You can do this occasionally or when it gets heavily soiled.

* You can place pandan leaf on your smelly leather item as well. Pandan (P. amaryllifolius) leaves are used in Southeast Asian cooking to add a distinct aroma to rice and curry dishes such as nasi lemak, kaya ('jam') preserves, and desserts such as pandan cake.

Fresh leaves are typically torn into strips, tied in a knot to facilitate removal, placed in the cooking liquid, then removed at the end of cooking. Dried leaves and bottled extract may be bought in some places.

* You can also substitute Febreze with most of the cleaning agents here. Febreze uses a chemical compound called cyclodextrin that has been used in household and custodial cleaning products for quite some time.

The sugar-like substance doesn't necessarily "clean" the leather odors out, but acts as an absorbent-like baking soda or crumpled newspaper, to help soak the leather odor out.

* You can also dip the leather apparel in a bucket of bleach, rubbing alcohol or an ammonia solution for about an hour. You will then find that the foul smell has been replaced by a lovely hospital smell that will certainly attract the nostrils of young gentlemen. A reapplication of leather conditioner afterwards may be necessary.

Here are some words of warning, though; make sure to do some colorfastness test on the leather to make sure it won't fade because of the bleach. It would also be advisable to use oxygen bleach instead of chlorine bleach to avoid fading and drying in the first place.

* Bonded Leather: Bonded Leather is leather's bottom. Suede scraps are ground together with glue and resurfaced in a process similar to vinyl manufacture. Bonded leather is weak and degrades quickly with use.

* Genuine Leather: This is produced from the layers of hide that remain after the top is split off for the better grades. These weaker under layers are known as suede. (Don't be confused with the fuzzy finish also referred to as "suede.") The suede surface is usually refinished to resemble a higher grade. It can be smooth or rough. Caution: The inferior quality of genuine leather becomes evident with use.

J. Walter Anderson opened the first White Castle in 1916 in Wichita, Kansas, and people liked the cheap hamburgers, fries, and colas he offered. However, fast-food really didn't become common in America until after World War II, when Americans first began to fall in love with their cars, and had leisure time and more money to spend on eating out.

The real heroes of fast food history in America are Richard and Maurice McDonald, the two brothers who created the first McDonald's restaurant in 1948 in San Bernardino, California. They wanted their restaurant to be more efficient and cost-effective, so they designed a simple menu in a small building without any tables, so people took their food and ate in their cars. By 1953, the brothers had decided to franchise their idea, and two franchises opened in Downey, California and Phoenix, Arizona.

Copycats

As the McDonald's became more successful, others began to take notice and copy their example to make their own fast food history in America. Keith Cramer started an operation in Florida that would turn into Burger King, and Ray Kroc, a blender salesman, was so impressed with McDonald's that he asked the brothers if he could sell their franchises. He opened his own McDonald's in Des Plaines, Illinois in 1954, and eventually he bought out the brothers and became the owner of the corporation. Kroc was the driving force behind the food chain's fantastic growth throughout America in the late 50s and early 60s. Wendy's was created by Dave Thomas in Columbus, Ohio, where the first restaurant opened in 1962.

More Newcomers

As fast food caught on, and more people decided they liked dining in their cars; more fast food shops sprang up around the country. Jack-in-the-Box began in San Diego, California in 1951, and by 1960 it had spread out of California into other areas. Troy Smith opened the first SONIC Drive-In in 1954 in Shawnee, Oklahoma, Dunkin' Donuts first opened in Quincy, Massachusetts in 1950, and the first Taco Bell opened in 1962 in Downey, California. All of these operations based their business at least loosely on the McDonald's operation and then modified it to work with their specialty foods.

Today's History

Today, fast food chains have spread all around the world, and have spread American culture right along with them. There are many more popular chains, like Carl's Jr., Arby's, Domino's and Dairy Queen, indicating that fast food isn't always about hamburgers. In fact, pizza, Chinese food, and just about any type of food imaginable are now available for take-out at fast-food chains across the globe. Fast food history in America is really the foundation of fast food as we know it today, and that history has made millionaires out of many of the people who first stated the fast food concept.
