* Do not discard over-ripe bananas. Slice and sprinkle it with lemon juice. Ice it to use later for milk shakes, puddings or banana bread. It will blacken if you refrigerate it.

* If you only need a few drops of lemon juice, puncture a lemon with a toothpick and squeeze out the estimate needed. Replace the toothpick. If the lemon is cut, it won't last as long.

* Fresh ginger will stay fresh for months in a freezer if you wrap it tightly in foil.

* To isolate the leaves of a round lettuce, hit the core end sharply against the kitchen counter top. The core can be pulled out and the leaves will isolate without tearing into strips.

Here is a tasty fish method which you can try:

Cod in Caper Mayonnaise.

4 cod fillets, skinned

Salt and pepper to taste

150ml dry white wine

½ lemon, sliced

6 table spoons mayonnaise

4 tablespoons lemon juice

50g capers, chopped

Place the fish in a frying pan and sprinkle with salt and pepper. Add the wine and lemon slices, cover and simmer for 20 minutes.

Remove the fish from the pan, reserving 2 tablespoons of the cooking liquor, and leave to cool.
Mix together the mayonnaise, lemon juice and reserved liquor.

Stir in the capers.

Place the fish in a serving dish and top with the caper sauce. Serve cold.

And a chicken recipe;

Pineapple chicken.

4 chicken portions

1 onion, thinly sliced

1 teaspoon salt

1/4 teaspoon pepper

1/2 teaspoon dried rosemary

1/2 teaspoon ground ginger

pinch of paprika

1 x 539g can unsweetened pineapple juice

chopped parsley to garnish.

Put the chicken in a casserole dish. Sprinkle with the onion, salt,pepper,rosemary,ginger and paprika and pour over the pineapple juice.

Cook in a preheated oven, 180c, Gas Mark 4, for 45 minutes or until the chicken is cooked and browned on top. Serve hot, garnished with parsley.

What's in Filipino Food - Ube

Purple yams, officially referred to as ubes, are a common ingredient in Filipino kitchens. These yams are actually violet in color and are used in all different types of recipes. They have even been known to make a pleasant looking violet-colored cake.

Many yam aficionados will tell you that true Filipino ubes have a darker skin than the purple yams, referred to as such, which are available in the United States.

Chinese Cooking

Yams are not potatoes and should not be confused with purple Peruvian potatoes that are available, at some grocery stores and farm stands.

One of the most common Filipino ube recipes is Halayang Ube or purple yam jam. This is made from powdered ube, milk, condensed milk, egg yolks and butter.

Ube Balls are common, as well. This dish consists of condensed milk, mashed ube, cornstarch and water. The condensed milk and ube are heated over low heat, until somewhat warm.

At that point, cornstarch and violet food coloring is added. Continue cooking until mixture thickens. Stir constantly. Mixture is ready to cool, when it separates from the pan.

Once ube mixture has completely cooled, shape into small balls. Roll in sugar and tightly wrap in plastic wrap, to store.

Other uses for ube yams in Filipino food is as an ingredient in cakes, cupcakes and the beverage Halo-Halo.

Filipino food is highly regarded an exotic cuisine in many parts of the world and the ube yam is one of the ingredients that sets Filipino food apart from other cuisines of the region.

How to Cook a Really Crispy Duck or Chicken

If you're like me you love the skin on the outside of duck, if it's crispy. The texture of the meal can totally be changed with a crispy skin.

The secret is to make sure the duck is scored across the front and salted heavily.

This helps dry up the skin and makes for a super crispy skin. You will not be the only one that enjoys this Crispy Duck Recipe, but everyone else at your dinner table.

Take the duck that you're going to use for your main dish make slits in the breast with a knife and poke with a fork. Salt the breast heavily use your discretion and taste. You can use this method for any recipe you can think of.

Just use the cooking instructions from the recipe you are using. Place the bird breast down on the baking pan and cook like that for about ¾ of the total time that the recipe says to cook it for, making sure to drain the fat from the bird, usually by sticking it with a fork under the wings and legs.

During the last 1/4 of the cooking use the broil on the oven to finish cooking up the breast. This should make the skin crispy while the duck is still moist. Chinese Food - Peking Duck method

Peking Duck is one of the most famous Chinese foods originating from the old royal courts. For centuries, the best Chinese chefs trained extensively in order to make sure that they could present this delicacy properly to the Emperor. In fact, their very lives depended on it. Today, no chef will lose his life for messing up his Peking Duck formula but his self-esteem will be sorely dented. However, with attention to detail, a contemporary day Peking Duck can be a feast fit for royalty. Here's just one of the many up to date Peking Duck recipes:

Ingredients

Japanese Cooking

1 3.5 - 4 lb duck (fresh or frozen)
2 pints water
3 tbsp dark soy sauce
3 tbsp honey
5 fl oz rice wine (you can use dry sherry)
1 lemon

To serve:

8 - 12 Chinese Pancakes
4 - 6 tbsp hoisin sauce
16 - 24 spring onions (cut into thin slivers lengthwise or into brushes)

In China, ducks are specially raised on a diet of soybeans, maize, sorghum and barley for just six weeks, when they are ready for cooking.

Normally, the preparing of Peking Duck is rather time captivating and complex. The duck must be cleaned and plucked thoroughly, then air should be piped in to detach the skin from the flesh which let the skin roast to a lovely crispness. While the duck dries a sugar explication is brushed over the duck and it is then roasted in a wood fired oven. However, with our contemporary life styles being what they are, this Peking Duck formula is rather less complicated.

Rinse and dry the duck thoroughly, blotting with kitchen paper.

Ladle the compound over the duck any times, ensuring that the skin is completely coated. Hang the duck up to dry somewhere cool and well ventilated with a roasting tin under it to catch any drips. When the duck is properly dry the skin will feel like paper.

Roast the duck on a rack over a roasting tin in which you have water to a depth of about two inches (this stops the

fat splashing), in a pre-heated oven 475ºF, 240ºC, Gas 9 for 15 minutes. Turn the oven climatic characteristic down to 350ºF, 180ºC, Gas 4 and continue cooking for 1 hour, 10 minutes.

Let the duck rest for about fifteen minutes before serving. You can carve the meat and skin into pieces using a knife or cleaver or you can shred it with a spoon and fork.

Serve the duck with warmed Chinese pancakes, spring onions and hoisin sauce.

Each diner takes a pancake, spreads on a minute hoisin sauce then tops that with some meat and crispy skin followed by a spring onion brush or some strips of spring onion. The pancake and contents are then rolled up into a tube and eaten whether with one's fingers or with chopsticks.

Even this simple version of the superior Peking Duck makes a very special evening meal party dish, fit for an Emperor.

Wine and Food Pairings - Which Wine to Serve with Dinner

Most people love to throw dinner parties for their friends and family. But, they may avoid serving wine because they do not know exactly what to serve. Do you serve red or white with fish? Will Merlot be okay if you are serving a Mexican dish? Do not stress over it - there are some basic wine rules you can follow.

The number one rule of thumb when choosing wine is "red wine with red meat, white wine with white meat." This is not always true, but it generally works quite well when you are unsure. One exception is chicken. The meat is white, but a nice fruity red wine goes well with it. The same can be said for tuna or salmon, so you do not have to always follow the rule of not serving red wine with fish. The second rule is the rule of complements. It is okay to match sweet seafood such as lobster with a sweet white wine. The next rule is the opposites attract. While you usually want to match like flavors, sometimes a contrast, such as a White Bordeaux with bluefish can be wonderful.

Italian Cooking

Outside of the basic rules, there are certain things you can look for and certain things you can avoid depending on what you are serving. Here are some hints as to what to serve with particular types of food.

Salads and Appetizers

You should avoid serving wine during your salad, as vinegar and wine do not mix well. But, if you are having an appetizer, you need to consider the ingredients in the appetizer to help you choose your wine. If you are having a cheese tray, the type of cheese will help you determine the wine. For example, cheddar is best with dry reds, Merlots, and Cabernet Sauvignon. Pinot Noir goes best with Swiss. Camembert and brie are great with a Chardonnay. The cheese we tend to think of as Italian such as parmigiano, romano, and reggiano go well with Italian dry red wines like Chianti and Barlol. If you are serving something a fried appetizer, consider serving a crisp, fruity white or red wine to help cut the oily flavor.

Beef, Steak and Lamb

Do you remember the "red wine with red meat" rule? That one is great to use when serving beef, steak, and lamb. Choose a dry red wine like Cabernet Sauvignon or a burgundy like Pinot Noir. You can also consider serving an Italian red such as Barolo or Chianti.

Fish and Seafood

To be safe, stick with a dry, crisp white wine. Sauvignon Blanc goes well with white fish while Sancerre and Muscadet go well with oysters. If you want to be different, try a fruity red wine (without tannins). But, use caution when serving red, especially if you are serving white, delicate fish. Cabernets with tannins combined with fish can leave a metallic taste in your mouth.

Poultry, Pork and Veal

For the most part, you want to follow the "white meat, white wine" rule with these. White chardonnays and Pinot Blancs are great. If you want to serve red with chicken, remember to choose a wine that is fruity like a Merlot or Zinfandel.

Think back to Thanksgiving. Do you remember how well your cranberry sauce went with the turkey? The same rule applies here. For turkey, since it has both white and dark meat, you want something fruity and tart such as a Beaujolais for red or a Riesling for white.

Spicy Foods

If you are planning on service something spicy like Thai or Indian food, a sparkling wine works best. Avoid wines with tannins and look for something fruity. And, make sure the wine is well chilled. Cold wine goes well with spicy foods.

Dessert

The best thing to serve with a delicious dessert is a dessert wine. In fact, you can skip the dessert part and just serve a dessert wine to your guests. These are sweet wines often sold in smaller bottles as you don't drink as much dessert wine as you do regular wine. Wines such as Sauternes, Beerenauslese, Bermet and Cammandaria will make a great end to any evening.

The most important rule about what wine to serve is to avoid being snobby about wine. There are no right answers, only basic rules to go by and even those, as you have seen, can be changed. Do not be afraid to experiment with different tastes. Chances are if you do not act like there is anything wrong with the wine you are serving, your guests will not either.

Vegetable Side Dishes To Serve With Fish

Cajun Potato Salad

This recipe serves four people. Cook two pounds of peeled potatoes and cut them into chunks. Chop four green onions and add these. You can sustain some of the sliced green part for garnish, if you want to. You can also add a chopped jalapeno chili if you like, or even two for a very spicy side dish.

Combine a tablespoon of mustard with three quarters of a cup of yogurt, a teaspoon of Cajun seasoning, and a dash of cayenne pepper in an additional one bowl, and then season this dressing with salt and pepper.

Toss the potatoes and green onions with the Cajun dressing and sprinkle the remaining green onion over the top. Serve this tasty vegetable recipe with blackened salmon for an easy gastronome meal.

Zucchini With Corn And Lemon

The compound of dill and lemon in this recipe is in fact good and this side dish would go well with any fish entree. Saute a thinly sliced zucchini with half a chopped onion and quarter of a teaspoon of dill weed in a tablespoon of butter in a pan.

Add a fifteen ounce can of drained whole kernel corn and a concentrate of teaspoons of lemon juice and warm all through before serving. This recipe might sound uncomplicated you will be surprised how perfectly balanced and flavorful it is.

Why Does Chinese New Year Fall on a Different Date Each Year?

I'm sure you’ve noticed that Chinese New Year falls on a
different day each year.

Why is this so?

Chinese Cooking

I asked myself the same question and finally I figured it
out.

Spring begins (立春, lìchūn) each year around Feb 4th (in
the Western calendar).

The first day of Chinese New Year starts on the New Moon
closest to spring.

(That’s why Chinese New Year is called the Spring
Festival.)

And ends on the Full Moon 15 days later with the Lantern
Festival.

The first day of Chinese New Year is always between Jan 21st
and Feb 21st.

But why are Chinese New Year dates so “unpredictable”?

To answer this question, one has to look at how a month in
the Chinese calendar or lunar calendar is calculated.

A Chinese month yue4 月 which means “moon” is a REAL moon.

Each lunar month starts on the day of the new moon.

This is the day the moon is closest to the sun and not
visible at all.

Does it mean that one has to look at the sky each time to
tell the new moon?

Fortunately, the answer is “no”.

Otherwise there'll be a lot of stiff necks!

Because the new moon occurs with enough regularity to devise
a calendar based on its phases.

(Full moon in the middle of the month. Moon wanes at the end
of the month).

On average, each lunar month is 29.5 days.

(Sometimes the months are 29 days and other times they are
30 days.)

But multiplying 29.5 days by 12 months gives 354 days.

Which is 11 days short of 365 1/4 days, the cycle of the
four seasons.

Or 11 days "faster" if you like.

So, how does the Chinese calendar “wait” for the natural
world to catch up?

By adding an extra month to make a “thirteen-month year”.

Well, not every year but every few years.

How often? It turns out seven times every nineteen years.

In this way, the Chinese calendar year keeps in step with
the real world.

Each year in the Chinese Calendar is also named after one of
12 animals of the Chinese Zodiac.

Last year, 2005 was the year of the rooster and 2006 the
year of the dog.

Food Sources That Boost Glutathione Naturally

Glutathione, the body's master antioxidant and detoxifier, is one of the 14 "Superfoods" listed in SuperFoods Rx : Fourteen Foods That Will Change Your Life, co-authored by Dr Steven Pratt.

Glutathione levels cannot be increased to a clinically beneficial extent by orally ingesting a single dose of glutathione. (1) This is because glutathione is manufactured inside the cell, from its precursor amino acids, glycine, glutamate and cystine.

Hence food sources or supplements that increase glutathione must either provide the precursors of glutathione, or enhance its production by some other means.

The manufacture of glutathione in cells is limited by the levels of its sulphur-containing precursor amino acid, cysteine.

Cysteine - as a free amino acid - is potentially toxic and is spontaneously catabolized or destroyed in the gastrointestinal tract and blood plasma. However, when it is present as a cysteine-cysteine dipeptide, called cystine, it is more stable than cysteine.

Consuming foods rich in sulphur-containing amino acids can help boost glutathione levels. Here are some food sources and dietary supplements that help boost glutathione levels naturally.

1. N-Acetyl-Cysteine (NAC)

It is derived from the amino acid L-Cysteine, and acts as a precursor of glutathione. NAC is quickly metabolized into glutathione once it enters the body. It has been proven in numerous scientific studies and clinical trials, to boost intracellular production of glutathione, and is approved by the FDA for treatment of accetaminophen overdose. Because of glutathione's mucolytic action, NAC (brand name Mucomyst) is commonly used in the treatment of lung diseases like cystic fibrosis, bronchitis and asthma.

2. Milk Thistle, Silymarin

Milk thistle is a powerful antioxidant and supports the liver by preventing the depletion of glutathione. Silymarin is the active compound of milk thistle. It is a natural liver detoxifier and protects the liver from many industrial toxins such as carbon tetrachloride, and more common agents like alcohol.

3. Alpha Lipoic Acid

Made naturally in body cells as a by-product of energy release, ALA increases the levels of intra-cellular glutathione, and is a natural antioxidant with free radical scavenging abilities. It has the ability to regenerate oxidized antioxidants like Vitamin C and E and helps to make them more potent. ALA is also known for its ability to enhance glucose uptake and may help prevent the cellular damage accompanying the complications of diabetes. It also has a protective effect in the brain.

8. Selenium

Selenium is a co-factor for the enzyme glutathione peroxidase. Selenium supplements have become popular because some studies suggest they may play a role in decreasing the risk of certain cancers, and in how the immune system and the thyroid gland function. However, too much selenium can cause some toxic effects including gastrointestinal upset, brittle nails, hair loss and mild nerve damage.

How To Cook Beef Roasts

Beef is one of the most popular foods here in the U.S. and while steaks are a great option, roasts are even better. There's nothing like the smell of a pot roast to make your mouth water and your house smell great!

Here's my guide for how to cook a beef roast - something I know well as I've done it many, many times.

How To Cook

First, let's talk about the most popular kinds of beef roasts available - bottom round, top round, chuck, and tenderloin. There are others available but these are the ones I've used most often - my go-to cuts. The 4 listed are also some of the most commonly found.

You'll find that most beef you'll want to roast is a tougher, less expensive cut. This is not a bad thing. As a matter of fact, this is the only type of beef you should roast. Tougher cuts lend themselves to roasting because they need long cooking times to become tender. Braising (cooking in a liquid) is usually used on these cuts because this method will make them juicier.

Braise roasts either by...

1. Rub exterior with a spice rub, brown roast in hot oil in frying pan to sear outside, place roast in a slow cooker along with a small amount of water and assorted vegetables such as onions, potatoes, carrots, etc. and cook on low for 6-8 hours. Juicier cuts such as chuck or brisket will make their own juices for gravy. For leaner cuts, add 1 can of beef broth at the beginning.

2. Use above method but instead of cooking in a slow cooker, place meat and vegetables in roasting pan and roast in the oven on 300 degrees F for approximately 2 hours.

TYPES OF BEEF ROASTS:

BOTTOM AND TOP ROUND - both of these roasts come from the hind quarters of the cow, and are known to be a tougher cut of meat. They are also leaner than other cuts. After cooking both can be sliced in pieces or thin slices of roast beef. Bottom round is generally the tougher of the 2 cuts.

CHUCK ROAST - This is by far my favorite roast due to its abundance of fat and tenderness after cooking. This type of roast also does better by braising, but comes out a lot juicier than the round roasts, making for a wonderful, flavorful meal. This cut cannot be sliced, as it pulls apart in strings, similar to pulled pork. It can be roasted in the oven or cooked in a slow cooker and makes its own juice for delicious gravy.

BEEF BRISKET - This type of roast comes from the front chest portion of the cow. It's another tougher cut of meat and contains lots of fatty tissue which makes it very juicy. Brisket usually requires long cooking times and braising for best results.

However, another common method is slow roasting or smoking on an outdoor smoker. Simply rub the meet with a spice rub, and smoke or cook under LOW heat for several hours. If cooking at 200-250F, it's not uncommon to cook this meat for 6-8 hours or even more. When it falls apart and melts in your mouth - it's done!

TENDERLOIN - One of the most tender and therefore, expensive roasts, it comes from the cow loin and is the tenderest part of any steak. Notice this portion the next time you're eating steak. Although this cut is lean, it's also super tender, so it comes out delicious. This cut should NOT be cooked for long periods of time and should NOT be braised.

The best way to cook a tenderloin is to think of it as a steak - grill it, or broil it in the oven. Cook until it's done to your liking. Check the temperature using an instant read meat thermometer.

Rare = 120F / Medium Rare = 135F / Medium 145F / Medium Well 165F / Well Done 165F or more

With any of the cuts mentioned above, get creative, season to your liking, and you'll have a wonderful meal.

Vegetable Soup

We often have vegetable soup at home. It has carrots, potatoes, cabbage and green peas in it. Lots of people also add cauli flowers, broccoli, tofu, mushroom or meatballs (bakso). That's why this food is ideal for small kids. Complete vegetables in a meal.

We also need beef or chicken stock besides vegetables. I prefer lean meat, but my mom usually prepares part of meat which has more fat every time her grandchildren come to visit her.
Meat with fat will of course make a more appetizing soup.

Thai Cooking

My mom will only need to add chopped and fried garlic, white pepper and salt. My recipe needs more than those three ingredients because of the lean meat that I use.

I prefer fresh spices rather that the ones packed in blottles and would need:
- 1 piece of garlic
- half teaspoon of white pepper
- cinnamon (about 2cm long)
- 1 piece of nutmeg
- 4 pieces of cloves
- 1 piece of cardamom
- ginger (about the size of an adult's thumb)

Don't forget to grind the white pepper first. More white pepper can be used in order to have a more spicy and tasty soup, but not for children.

I have to boil 500 gram of beef cuts together with the above mentioned spices plus salt until the beef becomes tender. The whole of water should be just enough to immerse the beef and later on the vegetables too. Then, I'll add cuts of carrots and potatoes. The other vegetables effect afterwards.

Finally, sprinkle the soup with chopped of fresh tomatoes and leek as well as fried shallot. Serve it warm with white rice.

Interesting Facts About Tomatoes

The tomato is a popular food item around the world.  But where did it come from?  Did people actually think it was poisonous at one point in time?  And is it a vegetable or a fruit?  Read more to learn the answers to these questions and more.

A Brief History

Italian Cooking

The tomato is native to South America.  From there, it spread to Mexico where it was grown and eaten by the Aztecs.  Early European explorers to South and North America brought the tomato back to Europe.  It was widely cultivated in Spain and Italy, before being adopted by the English. 

The first written evidence of the tomato in Europe was in 1544 by Pietro Andrea Mattioli, an Italian physician and botanist.  He referred to it as an herb called "pomi d'oro" or the "golden apple".  The first cookbook that uses tomatoes in recipes was published in 1692 in Naples, Italy.  There is evidence that by this time the Spanish were widely using tomatoes in food dishes, however, it was not used by all cultures.  In Florence, Italy and surrounding areas, the tomato was not widely used for food until the 17th and 18th centuries.

However, in the 1600's, Britain and main of its colonies did not eat tomatoes, as they believed that they were poisonous.  This belief was promoted by John Gerard in his book "Gerard's Herbal" which was published in 1597, despite the fact that he knew the Italian and Spanish frequently ate tomatoes without ever being harmed.  This belief continued until the 1700's, at which time the tomato was embraced and became very popular in a variety of food dishes in Britain and its colonies.  Tomatoes have remained popular throughout the world ever since.

Fruit or Vegetable? 

While tomatoes are actually fruits, the debate about whether they are fruits or vegetables continues because the tomato is often referred to as both. 

What is the definition of fruits?  Fruits are defined in botanical terms as a flowering plant that produces food with edible seeds.  In botanical terms, the tomato is a berry, which is considered to be a subset of fruit. 

However, the botanical classification system does not use the term vegetable.  Therefore, it is often defined by culinary terms.  Culinary terms distinguish between vegetables and fruits by when they are eaten in a meal.  Vegetables are eaten or served during the main course and fruits are eaten as a part of dessert.  However, vegetables are also defined by its edible parts, which for vegetables are the leaves, stems and roots. 

From the definitions above, the tomato is clearly a fruit because it has seeds and does not come from the leaves, stems or roots of a plant.  However, the desire to eat tomatoes as part of the meal means that it continues to be incorrectly referred to as a vegetable. 

Other Uses

Tomatoes are popular in food and in drinks but they do have other uses.  Here's a short list of other ways that tomatoes can be used:

  • Bathing in tomato juice is an effective way to remove the smell if a skunk sprays you or a pet;
  • Wash your hair with them after swimming in a pool in order to remove the chlorine from your hair;
  • To tenderize meats; and
  • To clean copper pots instead of using harsh or abrasive chemicals.

5 Best Cooking Oils for Diabetics and a healthy Heart

What types of oils should diabetics cook with? Two out of every three diabetics die from a heart charge or stroke, so citizen with diabetes should make sure to cook with oils that reserve a wholesome heart.

Oils high in mono- and poly-unsaturated fat help to lower blood cholesterol and are connected with a reduced risk of heart disease. Here are my five favorite hearth-healthy oils:

  • Walnut oil is a polyunsaturated fat and an exquisite source of omega 3s. It has a smoke point of 400 degrees F, so it is great for baking, sauteing at low-to-medium heats, or plainly drizzled on bread! (Think bruschetta.)
  • Flaxseed oil is also a polyunsaturated fat and good source of omega 3s. However, it has a much lower smoke point of 225 degrees F, so it should not be cooked. Try it stirred into linguine and in salad dressings.
  • Olive oil is a monounsaturated fat with a smoke point of 325 degrees F. Use it for cooking at a medium heat. Olive oil is also a great source of oleic acid, which has been connected to great insulin function and lower blood sugar, both of which are all the time important for diabetics. When buying olive oil, try to look for extra-virgin olive oil, which is less processed than the other types.
  • Avocado oil is a monounsaturated fat with a high smoke point of 510 degrees F, so it is great for high heat cooking, like sautéing or frying.
  • Grapeseed oil is a polyunsaturated fat with a low saturated fat level. It has a high smoke point of 420 degrees F, so it's exquisite for baking.

How To Cook The Perfect Pork Loin

The loin of pork ranks amongst the tenderest and tastiest cuts on the animal. By far the best way to prepare it is to roast it. But, there are two classic ways to roast a loin of pork. The first of these is the British way, where you roast at high temperatures for a relatively short amount of time. This gives you perfect crackling. The second is the French method where you roast the meat slowly in wine for a long time. This does not crisp the pork skin and you get no crackling, but you do get a very moist and juicy joint of meat.

I present both these roasting techniques below.

How To Cook

Herbed Roast Pork with Crackling

Ingredients:

1 loin of pork, (about 2kg), with the skin scored

small sprigs rosemary

small sprigs thyme

3 or 4 garlic coves, slivered

1 tbsp coarse sea salt

1/2 small onion, chopped

freshly-ground black pepper

Always make certain that the skin of your pork loin is as dry as possible (otherwise you will never get good crackling). If the skin looks damp, dry it as best you can with kitchen paper and sprinkle with cornflour. Leave for ten minutes then dust-off the cornflour (cornstarch).

Place the meat on a chopping block and score the fat. Insert sprigs of thyme and rosemary along with the garlic into the score marks now rub as much of the salt as you can into the skin. Grind black pepper to season well. Spread the onion on the base of a roasting tin then place the meat either on top of this (or on a metal rack in the roasting tin. Place in the centre of an oven pre-heated to 240°C and roast for 20 minutes. Reduce the heat to 190°C and cook for a further 110 minutes.

You can, of course make a gravy from the pan juices to serve with your meat.

Roast Loin of Pork with Garlic

This is the classic French method of roasting a joint of pork. Compared with the traditional British method you end-up with juicier and more succulent meat but you do not get a crispy crackling.

Ingredients:

1 loin of pork (about 1.5kg) boned and with rind removed

Salt and freshly ground black pepper, to taste

1 tsp freshly chopped sage

generous pinch of ground allspice

1 garlic clove, slivered

150ml dry white wine or water

Method:

Place the meat in a large bowl or dish and liberally rub the salt, pepper, sage and allspice into the joint. Leave in a cool place for several hours or overnight if possible for the flavours to infuse. When ready lay the joint flat and place garlic slivers at regular intervals along the inside of the joint. When done roll the joint up and tie securely with butchers' string.

Transfer to a roasting pan and add the wine or water. Cover with a lid or foil and place in an oven pre-heated to 150°C. Roast for about 2 1/2 hours, or until the meat is tender and the juices are no longer pink when pierced with a skewer. Check the pan every now and then and if the joint becomes to dry add a little more water.

Take the joint out and place on a warm plate. Cover with foil and allow to rest for 10 minutes. Remove the string at this point and carve into slices. Arrange these on a warm serving platter.

Again you can make a gravy out of the pan juices to serve with the meat if you so wish.

You now have two truly classic and time-honoured methods for roasting pork. Which you chose to base your own recipes upon will depend on personal preference. Though you're more than welcome to give both recipes a try.

Particularly in their freshest (and tastiest) form, they have proven to be reliable allies in the fight against coarse complaints, such as muscle soreness and insomnia, and coarse illnesses, such as cold and flu. When taken internally, rosemary displays antibacterial properties; when applied externally (through use in oils, baths, or vaporizers), it can comfort eczema, anxiety, muscular pain and insomnia, and enhance peripheral circulation. Oregano oil is believed to be not only antiviral, antibacterial, antifungal, and antiparasitic, but also a strong antioxidant and anti-inflammatory. Parsley acts as an effective diuretic and a mild antihistamine. Everyday, you are probably spicy at least one tasty remedial herb. The fresh (versus the dried and stored) range preserve more of their therapeutic and nutritional qualities, so go ahead—cook, eat, enjoy! It's good for you!

(3) Tea. Tea is the most beloved drink in the world, next to water. Technically, it's just a short-lived infusion—or an excerpt ready by steeping or soaking distinct parts of (an) herb(s)—and since there are thousands upon thousands of edible herbs, the possibilities are endless. Sweetened, black, iced tea, of course, is beloved in Texas and the Southwest, but the United States is no ifs ands or buts just getting in on the marvelous range this old tradition offers. Cities like Houston and Austin house flourishing businesses based entirely on the supply, preparation, and consumption of this endless assortment of drinks—from black teas, to green, to red, to white, to herbal. Nearly every person today has at least heard of chamomile, mint, or green tea, and is probably fairly familiar with others, as well. Chamomile is familiar for its soothing effects, as is rose and lavender, and can ease a mild case of insomnia, muscle cramps, or arthritic joint inflammation. Green tea is fortified with antioxidants, is low in caffeine, and can aid in weight loss. Peppermint or spearmint may calm an upset stomach, and a strong ginger brew helps digestion. Echinacea and sage are ordinarily steeped for colds; nettle, raspberry leaf, and red clover are former tonics for women. While one needs to be right when choosing an herbal tea—some may be harmful to those who are pregnant, nursing, or have distinct health conditions—in general, they are easily-prepared, therapeutic beverages for daily good health.

(4) Aromatherapy. While learning the farranging details of it is a discipline, the basic factory of aromatherapy is simple: utilize scents for their therapeutic effect. Once passed off as folklore, aromatherapy's popularity is booming—ads for candles, incense, oil burners, detergents, and home products abound. Clubs touting the “zesty" and uplifting sensation of their soaps are no ifs ands or buts applying the basic theory of aromatherapy. If you've ever felt comforted by the fragrance of home-cooked food, inhaled the scent of your morning coffee to get you going, or lit a candle just to "brighten your mood," you, too, are treating yourself to aromatherapy. Far more than in America or the UK, Italian mothers in the twenty-first century tend to be home-makers while their husbands go out to work. A recent survey showed that it's quite acceptable in Italian family traditions for the average young son in Italy to spend around fifteen minutes a day with his father but several hours with his mother.

It's not surprising, then, that he learns to take every cue from her: how to dress, where to go, what to eat, who to see. And such is the attachment formed in childhood that it continues into adult life: one in three married adult sons sees his mother every single day, and seven out of ten unmarried men still live with their mother at the age of thirty-five.

Italian 'mothers' boys': The Growth of the 'Mammoni'.

In other countries that would make them the object of jokes and derision. Not so in Italy. Here, there's nothing strange about men wanting to stay with their mothers for as long as they can - even when they have married - and it's applauded as the right thing to do. The average age for an Italian man to marry is thirty - one of the highest recorded in United Nations statistics.

And that's given rise to a growth of what have become known as 'Mammoni' - men who are still tied to their mother's apron strings.

A recent story in a Roman e-magazine told of an Italian lawyer in his thirties, a prominent and very powerful figure in an intensely male and competitive world. Recently married and with a baby due, he still takes his dirty washing to be done by his mother who also irons his shirts, buys his underpants and gives him food to take home in case his new wife can't cook...

Is this the archetypal Italian mother stereotype? Perhaps. But it's having a very real effect on Italian marriages.

Italian Mothers and Marriage.

For a shocking three out of ten Italian marriages is now failing specifically because of the unusually close attachment of men to their mothers.

Psychologists conclude that boys in Italy being indulged by their Italian mothers well into adulthood makes them too emotionally immature to deal with the demands of a relationship with another adult woman in the shape of a wife:

"The husband is used to being adored and when he doesn't get that unconditional love from his wife, he goes running back to his mother."

Italian Marriage: Does it have a future?

Perhaps that's why recent United Nations statistics have shown that the marriage rate in Italy is now at its lowest ever ebb: Italy is twenty-third out of twenty-seven countries (the United States being at the top of the table) in terms of how many people per head of population are marrying per year.

Will this trend continue? As with many things Italian, there are regional differences: the south of the county is still a more patriarchal society than the north, the cities are more accepting of women and men having equal rights - and responsibilities - than rural districts.

So does Italian marriage have a future? That will largely depend on the new generation of men in Italy and the ability of the younger generation of women to change a mindset that has existed for generations.

Delightful Sapa Valley in Northern Vietnam

Take an overnight train ride from bustling Hanoi and you will arrive in the remote mountainous region of Sapa Valley, home to beautiful mountains and valleys, many minority hill-tribes and fascinating street markets. By escaping to Sapa you will find here real life and culture and pure relaxation.

Sapa is an old French Colonial Hill station nestled amongst the highest mountain range in Vietnam, Hoang Lien Son which is close to the Chinese border. One of the most well known hill-tribes in the area is the Black Hmong Hill-tribe, who frequent the villages throughout the area. They have their own culture and customs and many tourists enjoying visiting and learning about their ways of life, by taking a tour or even arranging an overnight home-stay. By visiting the tribes people you will learn about farming techniques, how their wonderful garments are made and be treated to traditional hill-tribe fare and music, a fascinating experience, which will allow you to immerse yourself in how simple life can be!

Home-stays are an ideal choice if you wish to have a real life experience of how these people live and work their daily lives and the people of the Hmong tribe and other minority groups are very welcoming to foreigners visiting them. Another aspect of local culture not to be missed is a visit to one of the numerous, hill-tribe markets. Each market has its own unique feel and is generally a place for the locals to get together to sell their wares and to socialize with friends and family, perhaps even meet a partner!

The largest of these markets in Bac Ha market, 80 Kilometres from downtown Sapa in the Lao Cai region, this market takes place every Sunday under the gaze of the nearby mountains and the border with China. Here you will see tribes people from all over the region and even from over the chinese border who come here to barter and trade. This is a very common sight at all of the markets in the Sapa region, a real cultural experience, where horseback is the mode of transportation of goods for sale.

A Hmong culinary specialty you may wish to try is Thang Co Blood Porridge, made from a mixture of pony and goats meat, slow cooked to produce a fine 'blood soup' served in a large hot-pot. This dish is a popular staple of the hill-tribes people in the region and is shared by everyone, using chopsticks to dip the succulently cooked meat into a spicy dip and then eaten, normally accompanied with bread, instant noodles, vegetables and herbs.

It is best to try this dish at one of the restaurants in the Sapa area, as opposed to experiencing it at one of the markets, like Bac Ha, here you will see the locals socialize, eat and wash the soup down with wine! Thang Co is very popular among the locals and warms the body in a region where temperatures and plummet dramatically in the evenings.

Other activities you would be able to arrange are Cycling, camping and trekking and even traveling by motorcycle are all very popular ways to explore the Sapa Region. To get to Sapa you need to travel by train from Hanoi, overnight to Lao Cai, the main town in the region and then take a 90 minute journey by road and dirt track to get to Sapa itself.

For a short break to visit hill-tribes and trek, 3 to 4 days is the recommended amount of time for a tour here, for the more adventurous there are various treks, cycling routes and home-stays that can be arranged for those wishing to spend longer, and a perfect combination with the Sapa Region would be Hanoi and a cruise around stunning Ha-long Bay, well known for its limestone cliffs, commonly referred to as the Gullin of Vietnam!

How To Say Happy In Japanese

Telling someone that you're happy and that you're having in Japanese can be very useful and motivating for someone else. For example, if you're on a date and you want to continue seeing the other person, you will tell him / her that you enjoy the date. But how do you express hapiness, joy or pleasure in Japanese?

There are many Japanese words that can perform this task but let's start with the basic Japanese word ureshii. Ureshii is maybe the most coarse and productive word for express your happiness. When you're happy, you can just shout out ureshii!

Watashi no tame ni, kono bentou wo tsukute kureta yo ne. Ureshii yo!

Kanojo wa ureshii kao wo shiteiru.

She's wearing a happy face. (She's happy).

There are many ways you can use the Japanese verb ureshii. You can turn it into an adverb. To turn a Japanese adjective into an adverb, you need to omit the ending -i and replace it with -ku.

Ore wa kanojo no kao wo miru dake de, nanka ureshiku narimasu.

Just by seeing at her face, I come to be happy.

Kare wa ureshiku sono uta wo utaimashita.

He sang that song happily.

See how useful the straightforward Japanese adjective ureshii can do? Let's look the second Japanese adjective tanoshii which means enjoyable and fun. Tanoshii is commonly used when you want to express fun or enjoyment. Since it's a Japanese adjective, you would use tanoshii the same way as ureshii.
