Taleggio Dip

1 cup - taleggio cheese

½ cup - parmesan cheese

1½ cup - cream

1 No - oregano

Melt the cheese and cream and garnish with oregano. You can replace taleggio with other rind cheese such as oka, epoisses, raclette.  

Remember: They are a type of semi soft cheese whose rinds mostly pungent, at times sticky or gritty, and range from reddish to orange to brown. Pepper to taste

Melt the cheese and cream and add it to the pasta. Sprinkle black pepper and serve.

About Castelmagno: This is a type of a semi fat cheese having a savoury flavour and with age it begins to turn salty. But this cheese pairs well with pastas, grilled vegetables an rice.

Gorgonzola Salad

Gorgonzola is an aged, distinctively sharp blue-veined cheese that pairs naturally with fruits and walnuts. When younger this cheese has a sweeter flavour and is soft textured but with age it turns spicier and crumbles. 

Try this fruit and nut gorgonzola salad

1 cup - gorgonzola cheese

1 cup - lettuce

¼ cup - walnuts

1 No - peach

3 tbsp - cream

¼ tsp - butter

¼ tsp - sugar

Sauté the peach in butter and sugar for 2 mins.

Slice half the cheese and mix it with lettuce.

Melt the rest and mix with cream.

Add this mix to the salad and sprinkle pepper.

Italian Biscotti Recipes

There are an endless variety of Italian biscotti recipes. The following are a couple variations that are both easy and delicious and are sure to make nearby mouths water!

Simple Biscotti Recipe

Italian Cooking

Makes about 4 dozen cookies

Ingredients
1/2 cup vegetable oil
1 cup granulated sugar
3 1/4 cups all-purpose flour
3 large eggs
1 tablespoon baking powder
1 tablespoon anise or almond extract

Preheat your oven to 375 degrees. Prepare your cookie sheets by greasing them or line them with parchment paper. In a medium-sized mixing bowl, combine the oil, eggs, sugar and anise flavoring and beat until well blended. In a separate bowl, combine the remaining dry ingredients and then stir these into the egg mixture to form a heavy ball of dough. Divide the dough into two pieces.

Form each piece into a roll (a long tube) as long as your cookie sheet. Place the roll onto the prepared cookie sheet and apply a little bit a pressure until it is about 1/2 an inch thick.

Pop these in the oven for about 25 to 30 minutes, or until golden brown. When the color seems right, remove from the baking sheet to cool on a wire rack. When the biscotti are cool enough to handle, slice 'em up! Using a long-bladed knife, slice the cookies into 1/2 inch slices.

Place the slices cut side up back onto the baking sheet. Bake for an additional 6 to 10 minutes on each side. Remove from heat, and voila! A perfect cookie for a snack or for entertaining!

How to Cook Steak

How To Cook Lobster

A lobster may be any member of the Nephropidae family of marine crustaceans. This family contains over 50 species, but only a few are commercially important. The American species on the east coast of the United States and the California spiny species on the west coast are both highly prized as seafood. These creatures can exceed 40 pounds in weight, although the lobsters used in cooking are typically between two and three pounds. Common methods of cooking a lobster include boiling, grilling and steaming.

Fill a large pot with enough water to cover the lobster completely. Add one tablespoon of sea salt for each quart of water to preserve the flavor. Place the pot on a burner and bring the water to a rolling boil.

Prepare a basting liquid consisting primarily of butter and lemon juice. Baste the exposed meat, and put the lobster on the hot grill with its back on the grill. Grill for at least eight minutes until it is thoroughly cooked, and serve immediately.

Steaming

Place a steaming rack in the bottom of the large pot. Pour two inches of water into the pot and add a tablespoon of salt. Cover the pot with a lid, and heat the water to a rolling boil. Put the lobster on the steaming rack and replace the lid. Allow the water to reach a boil once again.

Steam for 11 minutes plus three minutes for each pound of body weight. If 1-pound steam for 14 minutes. If 2-pound steam for 17 minutes. If 3-pounds steam for 20 minutes. Remove from the steaming rack and drain the water from the lobster. Serve immediately.

To enjoy the dish, add your favorite sauce in the list of ingredients.

Brush a baking dish with a tablespoon of vegetable oil. Put the flour in a small bowl. Coat the meat with flour. Arrange the meats on the baking dish. Season the steaks with salt and pepper. Put the flour, salt, garlic and oregano in a medium size bowl. Heat the oil in the pan. Pour the water and wine into the pan. Add the gravy mix, green pepper and sliced green peppers. Stir the mixture and cover the pan. Change the heat setting to low. Heat the mixture for 30 minutes to 40 minutes. Pour three cups of vegetable oil into a small saucepan. Heat the oil and deep-fry meats. Remove the steaks from the pan and place in a clean plate. Pour the gravy over the meats and serve with the cooked rice. This recipe can serve up to four people. Refrigerate leftovers an hour after cooking to avoid food contamination.

The dangers of contamination of this meat are getting higher and higher. The working conditions are perilous for the employees as well.

The fast food restaurants are staffed by large numbers of underage workers. In many cases, child labor laws limiting working hours are ignored, and studies have shown that despite publicity efforts by the fast food industry to show otherwise, these workers tend to have higher incidences of drug use and do poorly in school. These group costs of the fast food industry are often overlooked. Finally, if we listen to the citizen in the local food and slow food movements, this whole fascination with fast, fast, and faster is impacting the very ability of human life in a negative fashion.

Looking For a Great Italian Meatball Recipe?

Looking for a great Italian meatball recipe? Wrap your lips around this one.

This recipe was given to my by my 105 year old Sicilian great-grandma. This is the real deal.

Italian Cooking

The Best Meatball Recipe

Can be prepared in 45 minutes or less.

Ingredients

1 pound combined beef, veal, pork (must be fresh)

3 large eggs

1 cup grated Romano Locatelli Cheese

1 cup bread crumb

1 clove garlic - minced

1 teaspoon salt

Preparation

(All mixing is done be hand)

In a large bowl mix beef/veal/pork with eggs. Then add bread crumb, cheese, and salt. Finally add minced garlic in stages. Add a little garlic, then mix. Add some more, then mix. This way all the garlic does not end up in one meatball. Now, it's time to roll up the balls. Average size is roughly 2 inches in diameter. I usually get around 18 to 20
meatballs per pound.

IMPORTANT! Do not cook meatballs in your pasta sauce! Meatballs cooked in sauce loose their flavor. The real key to a tasty meatball is cooking the them in an oven. So, heat oven to 375. Place meatballs on a rack - then on a cookie tray.

Bake for 12 minutes on one side then 10 minutes for the other.

BEWARE If you choose to fry your meatballs make sure you are alone. The aroma is so overwhelming that anyone in smelling distance will be steal your meatballs right out of the frying pan.

I freeze the meatballs in plastic bags and take out what I need per dinner. I just drop the meatballs into the sauce as if heats up.

To survive, De Cruz underwent an emergency liver transplant. Today, she is still living although she needs immunosuppressants that leave her weak and vulnerable to other illnesses. But not everyone who takes over-the-counter diet pills are as "lucky."

"Nobody knows how many are buying untested products of dubious efficacy - certainly consumers number in the hundreds of thousands, if not millions. At their most harmless, the products are a waste of time, money and good intentions. Some, however, are proving to be deadly. Over the past two years, seven women in Japan, Singapore and China have died due to the toxicity of the substances they ingested in the hope of shedding offending kilograms. From differing ethnicities and socioeconomic backgrounds and ranging in age from 16 to 60, the women had one thing in common: like De Cruz, they were all taking Chinese-made diet pills containing a variant of fenfluramine, an appetite suppressant that has been banned in the U.S. since 1997 for damaging heart valves. Doctors and health officials in Asia now believe the newer compound, called N-nitroso fenfluramine, can cause liver failure," Cullen added.

Taste of Home Recipes

Stumped for new Taste of Home Recipe ideas? Some days I walk through the grocery store or stare into my refrigerator, freezer and kitchen cupboards and I just go blank. For anything reason, I am surely blocked and cannot think of a particular thing I want to make or that I am not totally sick of cooking.

This months of the year are a time for outdoors, grilling, and quick food that doesn't take a lot of time to get ready in the heat! Summer is a great time for home recipes that you may not remember. Summer is also a time of bright, fresh local flavor. Your local grocers and markets will be busting with seasonal local produce, so this is a great time to give your cooking a taste of home made recipes.

Japanese Cooking

I've put together some recipes for an easy, flavorful, summery meal with the taste of home.

Asian garden Salad

1 med. Zucchini, cut in cubes 2 cups cherry tomatoes, halved 1 spring onion, chopped 1 cup celery, chopped 1 green pepper, chopped 1 cup toasted almonds 1/2 c. Fresh cilantro, chopped

Dressing:

1/4 cup rice wine vinegar 1/2 cup vegetable oil 2 tablespoons soy sauce 2 tablespoons sugar 1 tablespoon sesame oil 1 tablespoon sesame seeds 2 teaspoons grated fresh ginger

Mix dressing ingredients in a bowl. Chop vegetables and cilantro, place in another bowl, omitting the almonds. Mix with dressing, and let salad marinate in the refrigerator for at least 4 hours. Before serving, mix in the almonds.

Chicken and Spinach Grilled Pizza

1 ready-made pizza dough (or you can make it from scratch) 1 1/2 cups tomato sauce 2 tablespoons Parmesan cheese 1 cup. Mozzarella cheese 2 chicken breasts 1 ½ cups fresh spinach (lightly packed, don't crush it) 1 tablespoon olive oil 1 teaspoon minced garlic 1/4 teaspoon garlic powder 1/2 teaspoon Italian seasoning

Warm up your grill or barbeque. Baste the chicken with olive oil and sprinkle with garlic powder. Grill on high heat, cooking chicken evenly on both sides. Let cool, then slice thinly.

Mix the minced garlic and Italian seasoning in the tomato sauce. Roll out pizza dough to desired size, and place on the flat side of the pan (the bottom, the side without edges). Spread tomato sauce onto the dough, then sprinkle Parmesan, spinach, chicken, and top with Mozzarella.

Slide the pizza off your pan onto the grill. Cook for around 12 to 15 minutes, holding a close eye on the dough.

Banana Split Ice Cream

4 ripe bananas 2 cups freezing strawberries 1 can chunk pineapple 3/4 cup chopped pecans 5 cups milk 2 cups half and half 1 can sweetened condensed milk 3/4 teaspoon vanilla Juice of one lime Chocolate syrup and maraschino cherries to finish

Mash 3 of the bananas and cute the last one into round slices. Put in a bowl with the juice of one lime. Add the vanilla, milk, half and half, and sweetened condensed milk. Then add the pineapple and its juice, freezing strawberries and pecans. get ready in ice cream maker, ice at least one hour. Serve and top with chocolate syrup and maraschino cherries.
