tasty Food on a budget

Delicious Meals on a funds - In these austere times we are living in, with the price of all shooting through the roof, can we still allege a happy healthy lifestyle for our families. Of policy we can, I have dozens of recipes handed down through the generations, lots of them used to be ready by my dear old Mum, while she was here on earth.

But what happened to them I hear you ask, nothing they are still with us, but we have passed them by with the coming of the supermarkets, telling us we are too busy to put in order food ourselves, and we should be eating their processed products. Rubbish! We can make any meal they make and cheaper, oh by the way do you realise it is economy to use that local butcher in the neighbourhood than buy meat from a supermarket.

Cooking

I can see you laughing now, but think about it the local butcher doesn't use all of that containers does he, that is another recovery "the environment" and that bit of extra weight from the containers itself, you receive as meat. And you can be sure that there will be more meat in the fridge than would have been with a processed meal.

The supermarkets use economy meats than we could buy granted, just think about the bulk they buy in. Look at the ingredients on one of these meals, take chicken nuggets for example, personally I would not eat them, not when we can absolutely cook them ourselves

It may say on the package 45% or 50% meat, what is the rest then, oh only the legal process they are permitted to use, you know put all of the skins bones heads any part of the bird through an commercial sized food processing engine heat it up to the correct temperature, and add the resulting goo as an ingredient, very tasty, Not.

Everything else is flavouring to take your mind off what you are eating, have a look at the sugar and salt content, and then what else will it say, added glucose fructose or other words they try to fool you with. Do not be suckered in this is not healthy food, chicken nuggets are the easiest thing to make, " ever " and because you made them for the kids yourself you know what is in them.

Here you go try this it only takes minutes to do:

* Cooking Time: 10 minutes

Ingredients:

1egg
½ a teaspoon garlic powder
4 slices of bread brown or white will do.

¼ pint milk
2lb diced chicken
¼ teaspoon paprika

Method:

First, preheat the oven to gas mark 6 200 degrees c.

Toast bread until a light brown,then break up into small pieces,use the crusts too.

Reduce to fine crumbs in the food processor, if you don't have one break up with a rolling pin. Add garlic powder and paprika, and whiz again.

Place the breadcrumbs in a large plastic bag or a deep tray.

Beat the egg in a large bowl with the milk, and add the diced chicken, in batches if necessary.

Transfer the chicken pieces to the bag or tray of breadcrumbs and toss to coat evenly.

Arrange the crumbed chicken on a lightly greased baking sheet, and bake in a preheated oven for practically 10 minutes until browned and crisped, and cooked through.

Nothing easier than that folks, and they this will absolutely feed four hungry kids,

If you don't already have them spend in a rack of dried herbs, shop colse to you should be able to buy one for about six pounds, when they run out top them up from the supermarket shelves, buy the herbs in cardboard containers to save a few pennies.

They are invaluable in a kitchen folks unless you grow you're own, fresh herbs are expensive from the supermarkets.

Why not cook some potato wedges and serve those up with the chicken nuggets, again make sure they are you're own don't be spending a lot of money in the supermarket. There is nothing hard about cooking this cracking recipe, go on treat those taste buds have a go you will not regret it.

Serves 4

4 Large Potatoes or 8-10 New Potatoes
Half a Teaspoon (To Teaspoon and a half depending on how spicy you like it) Each of -
Chilli Powder
Coriander Powder
Cumin Powder
Paprika Powder
Teaspoon - Tablespoon of Turmeric
Pinch of Salt
Pinch of Black Pepper.

Wash the Potatoes but don't Peel them. Parboil until slightly soft 5 to ten minutes. Meanwhile mix the spices in a bowl.

Coat the Potatoes evenly in the spice mixture, the turmeric acts as a bulking agent and for colour and helps evenly coat the potatoes with the spice mixture. Drizzle with olive oil

Place in an oven on a oiled baking tray, on gas mark 7 or 425 F 220 C for colse to 15 minutes or until potatoes are crispy and golden brown, turn them once while they are cooking. Serve up with the nuggets and you have a great healthy meal, for those wee darlings, good for Mums and Dads as well folks.

Every recipe I mention has been cooked by my wife, my house or myself.

Make use of this cheap food have a look at my recipes, you will find you can absolutely use these ingredients to make a superb meal for that house of yours. 'Nian Gao', Chinese New Year Cake Recipe

For those of you who do not know, Malaysia is a multi-cultural country that made up from the Malays, Indians, Chinese and many other races. Every year, the Chinese would celebrate Chinese New Year.

During Chinese New Year, there's a very popular and a must-have food to celebrate with. It is said to bring luck to everybody in terms of finance, career and family. This is a cake that has been traditionally passed down from many generations thousands of years ago, it is call 'Nian Gao' or some people call it Chinese New Year cake.

Chinese Cooking

'Nian Gao' was told a story that Chinese has been using this cake to store as food for winter. This cake can be kept for long time without spoil and it provides energy to our body during winter.

Last year, I've visited a factory that produces this cake and had met with its owner. I was very curious on how they actually make this cake and I was asking for the cake's recipe. The owner didn't let me down from my sincere request, and so he gave the recipe to me. Below is the recipe that I would love to share with you.

Ingredients to prepare:

- 1 1/2 (325ml) cups water

- 2 1/2 (625ml) cups dark brown sugar

- 4 1/2 cups sweet glutinous rice flour

- 1/2 cup (125ml) vegetable oil

Instruction to make Nian Gao:

1. Pour the brown sugar and water into a small saucepan, bring it to slow boil. When it starts to boil, lower the heat and simmer for about 5 to 6 minutes until all the sugar has dissolved. Then allow it to cool to slightly warm temperature.

2. Add vegetable oil and mix (1) together thoroughly. Keep a 1/4 cup of the mixture in a separate container.

3. Combine the glutinous rice flour with the oil, water and mixture (2) in a large bowl. Work through the batter well. It will turn very sticky and thick. Spend as much time as possible to knead and work the mixture to a uniform consistency.

4. Use a 250 mm round tin cake or a round soufflé bowl of similar diameter. Oil the sides of the cake tin or bowl with some vegetable oil. Pour the batter into the cake tin or bowl. With wet fingers press the batter into the cake tin or bowl and dislodge any air pockets. Pour the reserved oil, sugar and water mixture on top.

5. Steam the cake over high heat for 4-5 hours. Make sure the water does not dry up or overtop the cake tin or bowl.

6. When the cake is done, remove from the steamer and allow cooling to room temperature.

7. For faster process, you can also cover it with foil and keep in the refrigerator to allow the cake to harden.

To serve, simply slice into wedges and serve in a plate. For those who prefer a soft texture, microwave for 20 seconds or steam on boiling water for 5 minutes until softened to the desired consistency.
