This is an extra spicy recipe, so beware. You will need a large onion, eight tomatoes, cilantro, ten jalapeno peppers, a lime, one lemon, two tablespoons of vinegar, a teaspoon of salt, pepper, garlic salt, and oregano. Chop and dice all of the ingredients and mix well. Leave this salsa in the refrigerator over night and sever cold.

Pickled Ginger Salsa Recipe

Yes, this sounds like an lively salsa, and it truly is. You need nine bell peppers, three red, six green. You also need two onions, a cup of water, six Anaheim green chilies, a cup of white wine vinegar, a fourth cup of ginger root, a half cup of sugar, a teaspoon of salt, a teaspoon of ground allspice. Mix ingredients together and make sure to put the leftovers in the refrigerator, because it will not keep.

How to Smoke a Brisket

A brisket is known to be the toughest cut of meat from a cow, though when
prepared and cooked correctly it can be the best tasting and most tender meat you
will ever eat. In this section, I will teach you how to choose, prepare, and
barbeque a brisket, Texas style, to achieve the best results possible. Please notice
the other smoker recipes located in the index on the right side of the page.

Choosing A Good Brisket To Smoke

How To Cook

A brisket is composed of two parts, the flat and the point. The flat section usually
has less fat on it while the point should have considerably more. The fat on top of
the brisket is called the "fat cap" and should be white in color. The thickness of fat
on top should be at least 1/4 of an inch thick, and thicker is ok. When purchasing a
brisket, make sure the meat is a deep red color, which will represent freshness, and
make sure it has plenty of fat incorporated throughout the meat, not just on top.
The combination of the deep red color and the white fat of a brisket is called
marbling, and it is the key to choosing a good brisket to bbq. Since the brisket is
such a thick cut of meat, the fat located throughout the meat will help to keep the
brisket moist while smoking.

Make sure the brisket has not been frozen. A frozen brisket will not display a deep
red color, the fat may be darker instead of white, and the brisket will not turn out as
tender and juicy as a fresh one after smoking it.

When I choose a brisket, I lift the brisket in the middle to see how limber it is. I have
seen briskets that are stiff as a board, and some that bend over each side of my
hand. The stiff ones more than likely have been frozen, and I have noticed that they
may not always be as tender as a brisket that is more limber. Some people disagree
with this test, but I am a firm believer because of the results I get.

The weight of the brisket should be between 8 and 11 pounds. A larger brisket
takes longer to cook, and the flat may become tougher or stringy because of the
longer cooking time.

Preparing The Brisket

After choosing the perfect brisket, I start my preparation process the night before I
want to smoke the brisket. First, make sure you have plenty of work space and a
clean area to prepare the brisket on. The brisket should have fat on it no more than
1/4 inch thick. Thicker fat will not allow the smoke to penetrate into the meat
located under the fat. If the fat is too thick, trim it down until you reach the 1/4-
inch thickness.

After trimming the brisket, I rub the brisket down with mustard. The mustard
creates a sticky substance on the meat for the rub to stick to, and it also adds a
great flavor when combined with the rub. Massage the mustard into every portion of
the meat, including the fat, so that it covers the brisket nicely. You do not want the
mustard layer to be too thick; it should be just enough to create a paste for the rub
to stick to.

I choose to use a rub on my briskets instead of a marinade because I have found
that marinades penetrate only about 1/2 inch deep into the meat. You should use
whichever method you like best, but I am going to describe the rub method.

After fully covering the brisket in mustard, apply the rub on the brisket. When done
correctly, the rub should form an evenly distributed layer of seasoning on the
brisket.

Wrap the prepared brisket in Clingwrap, or a similar material to seal it, and then
refrigerate it overnight.

Barbeque Time

Take the brisket out of the refrigerator one hour before you want to put it on the
smoker. Place the brisket fat side up on the smoker. The fat will release oils into the
brisket to help keep it moist while cooking.

I use a wood smoker with a firebox to provide indirect heat for outdoor cooking. I
have found this method to be the best, but there are many more smokers available
to choose from such as water smokers, propane smokers, and charcoal smokers.

I use mesquite for smoking briskets because it provides a delicious smoke flavor,
burns hotter so less wood is used, and that is how we do it in Texas. Many people
do not use mesquite, which is fine, and I have included a section for wood selection
to provide you with information about the different types of wood that are good to
use for smoking purposes.

To achieve the best results, I cook the brisket at 225 degrees for about 1 hour and
15 minutes per pound. Many variables also affect cooking time and temperature
such as how many times the smoker is opened, how close the brisket is to the fire
box, etc, but sticking to 225 degrees/1 hr. 15 mn. will work. Many people believe
that when the internal temperature of the brisket reaches 180 degrees, it is done.
This is both true and false. When the internal temperature of the brisket is around
180, the fat in the brisket really begins to marbleize. The brisket will maintain this
temperature for a while, and this adds to the tenderness of the brisket.

I always use a mop sauce to baste the brisket while it is smoking. This will keep the
outside of the brisket moist and tender. It is important to keep the lid closed while
smoking the brisket to reduce heat loss, so I baste the brisket with the mop sauce
about every 45 minutes to 1 hour.

A great way to keep briskets moist while smoking them is to use a mop consisting
of apple juice mixed with olive oil. It gives the brisket a great flavor, which is not
overpowering, while keeping the brisket moist from the oil. An easy way to apply
this mop is to put it in a spray bottle and simply squirt it on the brisket.

After 7 hours a brisket usually will not absorb much more smoke. An option for
finishing a brisket is to wrap it in aluminum foil, and place it in an oven at 225
degrees for the remaining cook time. I rarely use this method because I enjoy
smoking the brisket for the full time, but I have used it, and it works.

SLICING THE BRISKET

ALWAYS slice the brisket against the grain. Doing this will make the cuts of meet
very tender. To do this, remove some fat from the top of the brisket to see the
direction of the grain in the meat, and slice against it.

I separate the point from the flat before I slice the brisket because the grain
generally runs the same direction in the flat, and it is easier to see when it is
separated. The point is a little harder to correctly slice because the grain in it runs in
different directions. After some practice at carving the brisket, you will know which
direction the grain runs, and you will find it much easier.

The History Of Italian Food

While some of the most popular dishes associated with the Italian culture include a tempting slice of pizza and a heaping plate of pasta, there is much more to the world of Italian cooking. Throughout the many regions in Italy, the distinctive cuisine of the Italians shines through in a wide-range of eating habits, styles of cooking, and selection of local ingredients. The changing of the times has also influenced Italian food, as the meals served in the pre-Roman era possess both similarities and differences in the cuisine of today.

The culinary history of Italy established a reputation more than 2,000 years ago, which includes an illustrious movement during the Roman Empire. Italian Cooking

As for one of the most popular Italian dishes, while the history books often state that pasta was a product of the Chinese brought back by Venetian merchant, Marco Polo, it was actually a rediscovery of a food item eaten during Etruscan and Roman times. It is believed that the first pasta in Italy was made similar to the noodles of today - from the same durum wheat - which was cooked in ovens instead of boiled in water.

Today, the differences in Italian cooking still show through in the distinctions between the north and the south. Parma Ham Made At Home

If you'd like to know how to make a simple Parma Ham at home read the following instructions and you should be able to achieve great results without too much difficulty.

Genuine Parma ham is one of Italy's most famous food products and is often imitated, this method gives a faithful reproduction and is simple to follow but both the method and ingredients must be followed closely to avoid spoilage and food poisoning!

Italian Cooking

It's very important that the meat is kept in an airtight container or plastic wrapped for the duration of the curing process to stop any dampness getting to the meat and making it go bad.

For those of you who have had experience in curing meat you may want to try to cure a full leg, including the leg bone but I would recommend first timers try with a smaller piece of pork to start with as the curing times will be less and if it all goes horribly wrong you won't be too much out of pocket!

You will need:

o 1 piece of pork. Leg, loin, or even belly will do.

o Cure mixture for the Ham, this includes the right amount of salt and seasoning to ensure you have a better chance of success. You can make your own cure using the following ingredients:

250 grammes Demerara sugar

350 grammes coarse sea salt

25 grammes cure 2 (alternative name Prague powder 2)

40 grammes coarse ground black pepper

10 grammes ground juniper berries

25 grammes ground garlic powder

Total weight of cure is 700 grammes, this will cure 8 kilos of meat, i.e. use 87.5 grammes of cure per kilo of meat.

Method

Firstly chill the meat overnight, little things like this will ensure you have more chance of the cure taking. Rub the meat with half of the cure mixture, if using a boned joint ensure that the inner surface of the meat is properly coated, massage the cure into any crevices, take time doing this to make sure it is done correctly. Wrap the meat tightly in cling film or seal in a Ziploc bag or vacuum pack and leave in the fridge for fifteen days. Unwrap the meat and repeat step 2 with the remaining cure mixture, draining off any water that has seeped from the ham during the initial curing process. Leave the meat to cure for another fifteen days using the same process as in the first cure. At the end of the second fifteen days un-wrap the meat and leave to soak in tepid water for half an hour, this will leech any excess salt from the ham. Dry the ham off and leave to hang for 6 hours in a fridge or draughty cool room. The next process is to hang the ham in a warm room for 3 days, (an airing cupboard is ideal).

You are getting to the end of the process now but next you have to smear the meat side of the ham with a mixture of lard and black pepper and then hang the ham for a minimum of 30 days at 15 degrees Celsius with a 70% relative humidity.

It can take up to 2 months to cure a leg joint as if it still has the bone in, smaller joints may be cured and aged for a shorter length of time.

The Marble Temple In Bangkok

The Marble Temple is settled close to Dusit Palace. The name Marble Temple is used more by foreigners visiting the temple than the locals. In Thailand, the temple is known as Wat Benchamabophit.

This temple is not promoted as a tourist destination so the amount of foreigners visiting it is quite miniscule.

Thai Cooking

The wat was founded during the reign of King Chulalongkorn (Rama V) on March 1, 1900. The Ubosoth in the temple was constructed using Carrara marble from Italy. Wat Bechamabophit plainly means : the temple of the Fifth King.

The main structure at Wat Benchamabophit is the Ubosoth Hall. It is one of the finest works of architectural art. The Ubosoth has four gables and the east gable is the main entry to the Ubosoth.

The cloister is settled towards the rear of the Ubosoth. In the cloister there are 52 Buddha images. Some of the images are original while others are copies of foremost Buddha images.

Inside the Ubosoth, the main Buddha image is enshrined. This image is a replica of Phra Buddha Chinnarat at Wat Phra Sri Rattana Mahathat in Phitsanulok province. The image is in bronze and it has an unusual blue lighting colse to it. Just under Buddha's throne, the ashes of King Rama V are interred.

There are many other structures linked straight through pleasant walkways in the Wat Benchamabophit compound. These consist of the Abbot's residence, Song Dharm Hall, used for laying in state the members of the Royal house and high dignitaries, and the Bell Tower. A visit to the monks quarters is also worthwhile and one will see that the quarters are extremely colorful and well maintained.

Why is the Asian Elephant Endangered?

The greatest threat to the Asian elephant's survival is encroachment of its natural habitat by man. Deforestation and farming are clearing away their food source, causing many of these magnificent animals to die of starvation. A further reason why this magnificent animal is endangered is due to the fact that they are being hunted for their ivory tusks. This practice is illegal, yet poachers still earn vast sums of money for the elephant's tusks.

Elephants can weigh up to 5.5 tons and stand at a height of 3 metres, yet for all their bulk and strength they are still extremely fragile. They can be found everywhere from evergreen forests to dry scrubland and can spend up to 20 hours a day feeding. An adult Asian elephant can consume up to 200 kg's of food daily, ranging from fruits to berries and shrubs, leaves and bark.

Chinese Cooking

Pollution of the environment in which Asian elephants live is also having a negative impact upon these animals. Today there are less than 50,000 to be found in the wild and that wild is slowly disappearing as vegetation is cleared away to make way for progress. Ironically elephants are used to clear large tracts of lands.

A battle for resources has led to tragic conflicts between Asian elephants and humans, resulting in the deaths of many elephants who are reported as 'rogue'. Unfortunately aggressive behaviour from elephants can cause vast devastation and even the deaths of humans, so an aggressive elephant is quickly killed. Approximately 15,000 Asian elephants are kept in captivity, many under questionable circumstances. They are currently listed on the endangered species list and will continue to be so until conservation efforts are put in place to preserve what is left of their natural habitat.

Sell out the heat to a low simmer, cover and cook for 1 hour or until the meat is tender. Discard the bayleaf at this point.

Meanwhile merge the cornflour and water into a plane slurry then stir into the mixture. Bring to a boil then cook, stirring frequently, for 2 minutes or until well thickened. Serve on a bed of rice or noodles.

Italian Red Wine Stew Recipe
Ingredients:
1 lb of beef
1/2 onion
1/2 carrot
Parsley
1 or 2 sage leaves
Rosemary
1 bay leaf
1 clove
Cinnamon
2 pieces of ginger
Salt
Pepper
1/2 bottle of red wine
1 oz of butter
A few tbsp of extra virgin olive oil

Italian Cooking

First off you'll want to mince the onion and carrots and add to a container with all the herbs and spices listed above, and then add the beef, covering the lot with your half a bottle of wine. Let them marinade for 2 hours at least. Then take out the beef, dry it off and sauté in a pan over the olive oil and butter, and seasoning with salt and pepper to taste.

Next add the veggies with the rest of the spices, plus a little of the wine left over from the marinade. Cook over a low heat for 90 minutes, and if it seems like it's getting too dry, then add another dash of wine. Only when it's finished should you chop the beef.

Then strain the liquids left in the pan, and use them cover the beef, spraying with a little more wine, and then simmering. Then, you're done!

How about a liqueur to go with your meal? You'll need a few days to mature it though!

Italian Lemon Liqueur Recipe
Ingredients:
1 L of pure liqueur alcohol
1 quart of water
18 oz of sugar
3 - 4 lemons

Wash and dry the lemons, taking out the rind, and place in a container full of the alcohol, closing the container and leaving it for up to five days. Pour a litre of water into a saucepan, bring to the boil and add 18 ounces of sugar. Mix until the sugar is dissolved, then remove from the flame and add the alcohol. Filter off the impurities, and store until ready to drink. Cin cin!

Chinese Cooking Recipes - How to Make Ramen Noodles by Hand

What are Ramen Noodles

Ramen noodles are a Japanese noodle dish that originated from Chinese cooking recipes. The Chinese dish is la mien or hand pulled noodles. Ramen is uncostly to buy but doesn't all the time tastes as good as it could. Home made ramen noodles are easy to make with a diminutive endeavor and taste just as good as their Chinese counterparts.

The ramen noodle is a cut noodle rather than a pulled noodle. This makes it very easy to make either at home or in a dorm room. When made with soup ramen can be very tasty and nutritious.

The Ingredients
- 3/4 cups of flour
- 1 egg
- 1 tablespoon of water
- sharp knife

Making the Dough

First mix the water and egg in a cup with a fork. Make a volcano out of the dough and add the egg and water to the middle. Mix and then kneed the dough together until it forms a ball and no dough sticks to your hand. This will take about 5 to 10 minutes.

When the dough ball is complete, finding and feeling like a singular ball of dough, dampen a kitchen towel and wrap the dough ball in it putting it in a dark cool place for 30 minutes. This is called resting and makes the dough more pliable later.

Making The Noodles

First roll out the dough ball on a clean face until it is 1/8th of an inch thick. Remember to liberally flour your face and dough to keep it from sticking. You may have to dust the dough some times while rolling it out. Once it is the desired thickness, give the dough a good dusting of flour and fold it in half. Give the next face a good dusting and fold that in half as well. Do this 2 or 3 times until you have some layers.

Once you have your layers of dough, use a sharp knife and cut the opposite direction of the folded end. This should give you a very long noodle. Be sure to cut as thin as you can.

Toss the noodles in some flour to keep them from sticking. From here you can place them into boiling water for 5-7 minutes to cook your noodles.

1 red bell pepper
1 bundle spinach

Cooking Procedure:

  • In a frying pan, fry chicken meat until golden brown.
  • Saute onion, garlic and ginger.
  • Add the chicken meat and mix.
  • Add red bell pepper
  • Add coconut milk and simmer until chicken is tender.
  • When chicken meat is tender, add the spinach. Salt and pepper to taste.
  • Simmer for few minutes and serve.

Ingredients:

1/2 kilo pork meat
1 can coconut milk
2 siling labuyo chopped
1 thumb size ginger diced
5 cloves garlic chopped
1 onion chopped
2 tbsp. Shrimp paste
1/4 cup water

Cooking Procedure:

  • Saute onion, garlic and ginger.
  • Add pork meat saute until outer part turns light brown.
  • Add some water. Bring to boil.
  • Add the coconut milk simmer until pork is tender and thicken the sauce.
  • Add shrimp paste and chili peppers. Simmer for few minutes.
  • Serve hot.
